    Bakers use different flours from different wheats for different types of breads - although a milk based recipe might give a softer result that a water based one.
    Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.

    there are a lot more experienced bread makers than myself here, but I find that if I wrap my bread in a tea towel straight from being cooked, it doesn't go as crusty.

    Hi Daisy

    BMs are brilliant, and very versatile.

    Unfortunately you don't use a BM to make rolls. If you want rolls then you use your BM on a dough setting. It does all the work of kneading and proving the dough, then you just tip it out, shape it into rolls and pop them in the oven for a few mins.

    Adding sugar to the mix helps it stay soft.

    Don't brush the rolls with milk or anything before baking (as brushing milk on is designed to enhance a crust)

    Covering the cooked rolls when ou take them out of the oven should also result in a softer crust. This is because the heat gets trapped under the teatowel, steams a bit, and that steam passes into the crust.

    Also, using a recipe with some marg in it makes for softer rolls. The crustier french bread style dough has no fat in it at all, which makes it crusty.

    Hi Daisy, I have a BM but never really use it for rolls as they can be hard for the kids. I make a loaf every day but but the granary baps from Asda as they are 2 packs of 6 for £1 so not too bad and they are nice.

    I 2nd Squeaky's great bread link the Pan Amasado is the best tasting bread I've ever done.
