Try placing a roasting tin on another shelf with water in the oven. This creates steam which will give a better result when baking bread in an oven.

I knew I'd heard about bowls of water in the oven from somewhere. Sometimes I'm a mind of useful (!) information, trouble is, I often can only remember half of it0 -
I go to www.recipezaar.com and there awesome country rolls I think they are called are fantastic!
As its all cups and tablespoons it saves a lot of weighing out as well.0 -
I have recently started to make bread by hand. I was fed up with the bowling balls that my BM gave me. :mad: I have been adding a couple of tablespoons of olive oil to the mix.
This does seem to give a much softer crust, when slicing the bread I am not finding crumbs for the next week either. :j0 -
Hmmm - I always use olive oil in my bread anyway and whilst the loaves aren't too 'crusty', they are still not soft enough for my boys to eat (faddy little creatures that they are) However, I agree with the overall lack of crumbs.
Will deffo give the bridge rolls a go, with the steam bath0 -
Hi, have been handmaking bread for 20 years now, on and off - when I can be bothered!
The trick with the dish of water (or ice-cubes) in the bottom of the oven has the effect of making the crust even crustier! Most famously used by French bakers - baking baguettes.
As far as I remember, milk is the ingredient which gives a soft crust - used in place of, or in addition to, water
Also, while I'm on the subject, Lidl are now doing a range of ready mixed flours for various types of bread, ie, rye / ciabatta / etc. Tried the rye and was impressed how it turned out. Easy way to start off.Money can't buy you happiness, but it does bring you a more pleasant form of misery.

slightly off-topic, but following on from the last post ... bread made with milk or part milk makes nicer toast than bread made entirely with water0

If you use that marvel stuff for the milk its also cheaper and still tastes good.
The water trick does work in the oven, even (if its safe to do so in your oven) just chucking ajhandful of water onto the base of the hot oven and shutting the door quickly will create the steam effect to make the bread or rolls crusty, although I use a little dish.
I think if you brush sesame oil or meleted butter on it helps and then you can always add poppy seeds etc for a posh look!0 -
This is the recipe from the book that came with my BM. I have used it several times and find it great
Floury Baps
225ml/8 fl oz water
400g/14 oz strong white bread flour
2 x 15 mi/ 2 tbsp dried milk powder
1 x 5ml/1tsp salt
1 x 5ml/1tsp caster sugar
25g/1oz butter
7.5ml/1.5tsp easy blend dried yeast
Put into BM in the order recommended and use your dough programme (Mine is No. 9)
Knock back the dough and divide into 6 and form into rounds. Place onto greased baking tray covered with oiled cling film and leave to rise until doubled. Brush with milk and dust with flour. Bake at 200/400 gas mark 6 for 15-20 mins.0 -
Hope this helps- I don't use a breadmaker and this is my roll recipe;
2 lb bread flour(3 parts white +1part wholemeal or all white)
4 tsp easy-blend yeast
2 tsp sugar
2tsp salt
EITHER 3 tbsp dried milk + 1 pint of warm water(cheaper)
OR 1/2 pint milk +1/2 pint warm water
I knead for about 5 mins and let it rise for 1 1/2 hours.Then knock back and shape into 12-16 rolls depending how big I want them.Prove for about 25 mins,bake for 15-20 mins in very hot oven.When I take them out I wrap them up in a tea towel like Fullup does.The crusts are always soft -I think its a combination of using milk and wrapping them up.

I made bread yesterday using a delia recipe, although it came out ok it was too crusty on the top so no one ate it :rolleyes:
I was thinking of buying a bread maker but as there's so many out there i was wondering what makes everyone else has & if they are good?
I would really like to make rolls for my son for his packed lunch but i'd need to make the soft, would i be able to make soft rolls in a BM?
They are so expensive & i really wouldn't want to purchase a BM only to find it's not very good & doesn't make soft bread/rolls.
