Bread making, soft rolls

    i don't do soft rolls normally, but if I want them softer than normal i used boiled millk instead of water (boiling kills the enzyme in milk that toughens the crumb) and as soon as they come out of the oven cover them with a cloth. I also cook them quite close together - so they need to be torn apart to separate when cooked - this way the sides stay really soft and crustless. hope this helps a bit.

    I am sure there is a recipe on here for soft rolls in the Panny but cannot find it.
    I have tried the recipe in the book that comes with the Panny but it still wasnt soft:rolleyes:
    Is there a secret to it?
  • Yes, as soon as you get them out of the oven cover them with a tea towel until cool.

    I freeze them ( i bake in bulk) and then defrost in the microwave and they come out lovely and soft.

  • Try this recipe (I'll merge this with that thread later ;) ). I agree with the tea-towel trick, and a Tbsp of milk powder to 500g flour aids a sort crust :D

  • Or use half milk and water in the mix - I sometimes use milk that's slightly on the turn

    Are the rolls fresh when you defrost them? I find that bread cooked in the Panny is only good the first day and then I slice what's left and freeze it to be used as toast.

    I just use the standard white bread recipe in the panny, I put in the ingredients for a medium loaf and stick it on the pizza dough setting 45mins, then leave it to rise till it reaches the top of the panny pan. Take it out, it's really gloopy, so use plenty of flour, knock back, divide into eight, pop in the remoska till they all meet each other, then bake till they're golden, remove, put on cooling rack so the bottoms don't end up soggy and cover with a tea towel till they cool.

    I think that the remoska helps keep a lot of moisture in, as does the tea towel. Even my dd3 who is a fuss pot about rolls being soft enough will eat these ones!

    I will try the tip from Mummysaver I think and give that a whirl:D

    try not to add too much sugar to the bread mix, as that crusts up the bread. Also adding milk instead of just water makes the bread softer.
