I've merged your thread with last years homemade sweet thread to aid people's searches and be linked to the Homemade Ideas sticky. It's a fantastic idea making sweets and is always received well
I wondered what had happened thought i was going mad lol.

SNOWBALL TRUFFLES makes 30
you will need
200ml double cream
200g dark chocolate (70%)
200g desiccated coconut
pour cream into pan and bring to boil
chop chocolate into small pieces and put in large bowl
pour cream into bowl with chocolate until melted and well mixed and smooth
leave to cool them put in fridge for 2hours.
scoop out teaspoons of mixture and roll into walnut size balls then roll into coconut.
keep in cool dry place for about 3 days or freeze for about a month
I have made these a couple of times could not get away with using teaspoon so tried melon ball scoop dipped in water each time i did one. also tried placing hands in cold water for a couple of minutes and doing it by hand this worked great but you have to be quick or you end up in a right messBaby Due Date 30/01/ 2013

CANDY CANES MAKES AROUND 40
you will need
200g unsalted butter , at room temperature
150g caster sugar
2 tsp vanilla extract
1 egg
300g plain flour , sifted
red food colouring
Cream the butter and sugar in a large bowl with a hand mixer.
Beat in the vanilla and egg, then add the flour. Beat until smooth, remove from the bowl and separate it into two.
Blend one half with red food colouring, adding until you get the colour you want.
Wrap both in clingfilm and chill for 30 minutes. Heat oven to 180C/fan 160C/gas 4.
Roll both doughs out to 5mm thick. Cut into 1/2 cm strips and chill for 5-10 minutes until slightly firm. Take one of each colour, then press on top of each other. Press the ends together then carefully twist and roll them so they become a smooth rope. Shape into a candy cane and put on a baking sheet lined with baking paper (you might need to chill the dough between rollings if it gets too soft). Chill for 10 minutes then bake for 8 minutes. Cool on a baking rack

2oz butter
4 oz sugar
2tblsp milk
2tblsp cocoa powder
1tsp coffee essence (or camp coffee)
5oz coconut
1oz coconut for rolling
Method
Melt butter, sugar and milk. Remove from heat
Add cocoa powder coffee and coconut and stir well
Form into small balls and roll in coconut
Place in cases and leave to set.
I always double up this mixture as they are so nice.
mmm - i made these tonight but i had no butter so i used olive spread, no coffee essence so i used vanilla extract and not enough coconut to roll all of them in, so i finished them off in icing sugar. came out a treat! ive already scoffed 4 of them!

Glad to help its all about keeping the cost down even more so this year with overtime cut and redundancies everywhere.

I have access to my local Resource Centre, where yesterday I found clear trays of varying heights, clear lidded food boxes, clear celephane (sp) and thin gift ribbon, so am one happy bunny, especially as the few bits I needed only cost £2.00.
