    Please could you tell me how long it stores for? also do you need to keep this in the fridge as it has cream in it.

    2oz butter
    4 oz sugar
    2tblsp milk
    2tblsp cocoa powder
    1tsp coffee essence (or camp coffee)
    5oz coconut
    1oz coconut for rolling
    Method
    Melt butter, sugar and milk. Remove from heat
    Add cocoa powder coffee and coconut and stir well
    Form into small balls and roll in coconut
    Place in cases and leave to set.

    I always double up this mixture as they are so nice.

    If giving as gifts i make xmas eve due to the cream. About a week but in our house it never lasts that long;) .

    10oz icing sugar
    Rum (to taste)
    Vemicelli strands

    Method
    Melt butter and chocolate in a bowl over hot water.
    Remove from heat
    Add icingand rum and stir well
    Form into small balls and roll in vermicelli
    Place in cases and leave to set. Or on baking parchment

    Keeps for a couple of weeks.

    INGREDIENTS


    170g egg whites, (4-5 eggs)
    470g caster sugar
    300g water
    16g leaf gelatine, soaked in cold water
    1 lemon, orange or lime, finely grated zest only
    toasted desiccated coconut, for coating



    Method


    1. Whisk the egg whites to soft peak in a large, spotlessly clean bowl.

    2. Put the sugar and water in a pan and bring to the boil. Bubble away until the mixture reaches 126C on a sugar thermometer. Remove from the heat and stir in the gelatine.

    3. Pour the hot sugar syrup slowly onto the egg whites, whisking at all time. Continue to whisk at a slow speed until completely cool.

    4. When cool, add in whichever citrus zest you have chosen (or you could use a little finely grated dark chocolate). Pour into a tray and leave to set overnight.

    5. When set, cut into 2.5 cm squares and roll in toasted desiccated coconut.

  • Almond brittle

    1 tsp sunflower oil
    2 tbsp water
    175g granulated sugar
    110g sliced blanched almonds
    1. Oil a 23 x 5cm baking tray and set aside. In a heavy bottomed saucepan, pour in the water and sugar. Cook over a low heat until the sugar has dissolved.
    2. Cover the pan and bring to the boil. Leave covered until condensation washes down the sides of the pan. Turn the heat up to medium and cook until the sugar turns amber in colour. Quickly stir in the almonds and pour onto greased baking sheet.
    3. Spread out evenly and leave to cool. When cool, break the brittle into small pieces and wrap in greaseproof paper, then gift-wrap in a pretty box ready for giving. The brittle should be stored in a cool dry place and will last for about a week.

    I am planning to make a homemade food and drink hamper but wondered what do you put sweets / mince pies etc in when you put in hamper as wondered if would go stale really quickly if not in airtight container.
    Yearly Grocery Budget - £100.77/ £3500. January Treats Budget - £11.80 / £100.

    For the sweets i am going to use the same bags as the snowman soup cone shaped ones.

    For the mincepies you could put them on a xmas plate and put them in a clear sealed bag or cover with clingfilm.
