    This one is by far the best one!!
    This recipe makes lovely squishy gingerbread men...

    1) 80g Margarine
    2) 2 tbs Golden syrup
    3) 60g Sugar
    4) 1 tsp of Ginger (powder)
    5) 1/2 tsp Bicarb
    6) 180g Plain Flour
    Warm 1, 2 & 3 slighty and 'cream' together, sieve 4, 5 & 6 and mix in. Roll out. Gas mark 5 for 15 - 20 mins.

    I bake lots of cookies for our farmers market and this is a definate winner

    Ginger Crackles
    Makes 24

    225gm SR Flour
    2 rounded teasp Ground Ginger
    2 level teasp Bicarb
    80gm Sugar
    100gm Margarine
    100gm Golden Syrup

    Place all ingredients in bowl mix thoroughly. Divide into 24 pieces the size of a walnut. Flatten slightly, place on baking parchment and bake 170*c for 15 mins, until golden colour and crackled on the top.Cool on tray to crisp up.

    Basic Cookie Mix
    Makes 24

    300gm SR Flour
    200gm Margarine
    100gm Sugar

    Variations. Add Choc Chips. For choc chip cookies
    Substitute some flour with cocoa add choc chips for double choc chip cookies
    Roll in coconut for coconut crumbles
    or add lemon or orange rind for citrus cookies

    Place all ingredients in bowl mix thoroughly. divide into 24 pieces size of walnut. Flatten slightly. Place on baking parchment and bake 170*c 15 mins
    Cool on tray to crisp up.

    12oz Plain flour
    4 oz butter
    2 tsp ginger
    1 tsp bicarb
    1 egg
    4 tbsp golden syrup
    6 oz brown sugar

    190 C - 10 - 15 minutes.

  • I would love to hear from anyone who finds a no expensive cutter for a gingerbread man! its one of my son's favourite stories at the moment but I never see any man/woman cutters only dogs, chrsitmas trees etc!

  • I was listening to the news today and hhhmmmm *cough* you shouldn't call them gingerbread men lol....it should be gingerbread people.lol

    I think they've gone a little too far now lol

    My OH as put in a request for Gingerbread men so I guess I'll be making them this weekend.

    I've decided to have a baking day this afternoon so the boys can help. I reckon gingerbread men/women/shapes will be on the menu, along with the mince pies I have a sudden craving for :D
