  • I find Sainsburys is the best for gluten free food. Their labelling is very clear and almost all their own brand products are gluten free. Regarding cooking, you can cook almost any recipe by replacing the normal ingredients with gf ones. Gf soy sauce, flour, baking powder, gravy powder etc are widely available. Oats can be replaced with flaked quinoa/flaked millet/flaked rice. I agree that gf toast is disgusting but it's actually OK toasted - you can freeze the whole loaf and toast it from frozen (I get the Juvela fibre sliced loaf). And definitely get yourself properly diagnosed, then you can pay a yearly prescription charge and get as much bread/pasta/biscuits etc as you want for free. If you're coeliac you're at high risk of osteoporosis and other illnesses, and you really need to be tested and monitored for these things, so being diagnosed is important. You can also join https://www.coeliac.co.uk and if you're a member you get a free book with thousands of gf products in it (tell a white lie if you haven't been diagnosed yet and they'll still send you the book for free).

    I know this is an oldish thread but wondered if there was anyone who could advise? My son is 6months old and allergic to cows milk protein. (He comes out in hives within minutes of contact with it). I've recently made him some bread wihout milk as a lot of off the shelf stuff has milk powder added to it. Unfortuatly though he had another really bad reaction. I gave him the bread to eat in his hand and within about 2 minutes, hives started appearing all over his face and hands were he had been holding the bread. The olny things I put in it were, flour, water, sugar, yeast and a dairy free margerine, therefore I think it was probably the flour that caused it.
    However reading this thread it appears that this is not necessarily coeliacs (as I assumed) and does appear to be an allergy. Just wondering if anyone knows what the difference is or is it all the same thing? We are waiting for a hospital appointment at the minute but was hoping someone might be able to help?

    My son has aspergers, and following a suggestion (and backed up by a urine analysis), starting monday we have put him on a gluten free diet. My husband approached the school to say we were considering it and they gave us the start date so have been rushed a little into it. Am going to make some bread tonight - yikes! First question - have a panasonic breadmaker which usually goes dry ingredients first, recipe says wet in first, what should I do?
    2) does milk have gluten in it? My book doesn't say and nor does the carton of milk- don't want to make a silly mistake so early on.
    3) anyone have any recipe suggestions - any appreciated, but hoping particularly (at the moment) for snacky type things - or do I just put gf flour in place of ingreds in normal recipe?
    4? any other suggestions?

    You do need to reverse the ingredient order for GF baking, so go with the Panny instructions.

    Milk doesn't contain gluten so you're okay there.

    I'm not very experienced with baking GF so can't help you much with recipes. My stepdaughter's coeliac (diagnosed at 5) but is okay with oats (much lower gluten), so we tend to have flapjacks.

    Consider joining the Coeliac Society if you haven't already done so - they regularly publish a booklet of GF foods you can buy.

    Good luck - I've known a couple of families with Aspie kids who've gone GF and have seen an improvement.

    Great name - suggests a positive outlook on life.

    I am coeliac and have experimented with loads of GF cooking. Havent found bread too successful yet but have tried the 'fresh' bread that I can get on prescription. Is your GP willing to prescribe?

    Try this link for info http://www.coeliac.info. What I did was emailed all the suppliers and told them I had been diagnosed and had they got any free samples and information to try, got loads of stuff back so worth a try.

    For baking I have found that the best way is to substitute the flour in recipes with a 50:50 mix of Doves GF flour (from supermarkets) with Juvela mix (specialist mix on prescription). The Doves has better properties and the Juvela a better taste so the mix works. If a recipe calls for SR flour I add a teaspoon of GF baking powder per 8oz flour. I also add a little xanthan gum (again on script) as this stops the cooking from crumbling.

    I have found over the last 7 years since diagnosis that it is really experimental,some things will work and some wont.

    Thanks for the replies so far, am going to look at the coeliacs website next - hadn't thought of that, and then work my way slowly down the long list that squeaky has supplied - I'm not going to have any time to go to work!

    I'm back - am reeaally annoyed with myself, went ahead and made some gluten free(!) bread by hand from the recipe on the back of the doves bm pack. Followed it to the letter - 1tsp vinegar, now having read through the suggestions made above, it turns out malt vinegar (I should have known, but remember only doing this since monday) is a no no. My son is going to be so disappointed and I feel like I've wasted my afternoon. This is so hard at the moment, but I 'm sure will soon be in the swing of things, sorry,just wanted to get that off my chest.

    Hiya only spotted this as I was logging out I've got to give the pc up for a bit but I'll be back later.My son is on 'the diet' too don't be too hard on yourself you've made a hard decision even to try it...it doesn't come together overnight but you'll be fine :D honest :D I'm still *reasonably* sane...Any help I can give just ask good luck with the bread it took me ages to get it right at first :eek:
