In reply to several different requests this is my menu plan for the next three weeks.
As you can see some dishes are meat free so more or less free or very, very cheap. The family have never compalined about the meat free dishes and my OH is well fed. The soups are very filling and served with h/m rolls or bread.
I've got in the habit of making things in two so that I have last minute meals in the freezer but due to the freezer being full of veg I don't have much room.
Try making the Falafel burgers they are just so lush and I'm still amazed at how tasty they are, they are actually made from chick peas and spices so as cheap as the cost of 1 tin which is between 30 - 40p. These are very popular at a bbq. Guests were really shocked as to what they were made from.
M -Leek,apple,walnut & stilton pie V (Make 2 freeze 1)
T -Broccoli & stilton soup V
W - pasta with chilli, garlic, basil and spinach sauce with cheese V
T - rocket,bacon and mushroom quiche (make 2 freeze 1)
F -Fish pie (from freezer, made three weeks ago)
S -Lunch - veg soup dinner V - Pizza V
S -Lunch - Roast chicken - evening tea egg on toast
M -Chicken & veg pie
T -sweet & Sour chicken with rice
W -chicken noodle soup
T -Mushroom & Cheese omelette
F - leek & ham cannellino
S - Lunch -pasta with h/m rocket pesto V Dinner - Falafel burgers & chips V
S - Meat loaf
M - Mustard chicken with winter veg (freeze half)
T - Leek & salmon parcels
W - pasta with broccoli & stilton soup as sauce V
T - spanish omelette
F - jacket potaotes with chilli
S - Lunch - cheese toastes tom puree, basil, onion, tomato V dinner -veg curry V
S - Out for lunch with parents
I guess i might save more than most who grow veg because i have started to serve veggie food but the meals are really tasty so we are not missing anything and my grocery bill is now so silly it is alarming to think how much i save.
Anyway hope this answers some of your questions. :santa2:Kind Regards

Hi Mumof4
Thanks for the menu plan you've done. Do you have your own recipe for falafel burgers? And how do you make chilli, garlic, basil and spinach sauce ? I love the idea of brocoli and stilton soup as a pasta sauce and will be trying that myself!ilovefreegle.org - give it away don't throw it away0 -

Fry some chilli, garlic and basil in a little olive oil for a couple of minutes then add some plum tomatoes and a few more basil leaves. Cook for about 20 minutes on a low heat. Break up the plum tom's using a wooden spoon and just before it's ready stir in some spinach. (I add a good few handfuls but my children do happily eat it)Stir in the pasta (i use lingunie(spelling???)) and then serve with some salty cheese such as goat's cheese.
edited to say; If using tin tom's use about 800g - 1200g for a family meal so i think that would be about three tins.
I got this from the bbc good food mag this spring and just love these. This makes 4 burgers but i tend to make them in batches of 8. I've made these so often that i now by sight how much to use, so here's the recipe from the mag. I made this with dried herbs before i'd grown fresh and they tasted fine.
can of chickpeas,1tsp of cumin and coriander, 1⁄2 tsp harissa paste or chilli powder (i use chilli),2tbsp p/flour,2 tbsp sunflower oil,1 small onion chopped, handful of parsley(can use coriander leaves)
Mix all together and make in to burger shapes, lightly fry for two minutes on each side. (I also sprinkle flour on each burgaer to hold them together a little better)
Serve with green salad and tomato sala/relish - lush:beer: note - my friend now makes these but she hads slightly more spices so I guess you just
just adjust it to suit.Kind Regards

What a wonderful thread! We are just digging up half of our garden for fruit & veg, so must pm you mum of 4 for your plans! We already have cherry, blackcurrants, rhubarb, potatoes & plum. We usually grow tomatoes in grow bags and odds like that but we have decided to go bigger next year.

Mumof4 - would the chickpea burgers be good inside pitta bread? they sound yummy and ds1 would love them - just wondering whether they would work for a pack-up lunch?
any more recipes would be gratefully recieved -I am always looking for new ideas for our home-grown veg and like you, we eat more veggie stuff- meat is more of a treat now0
