    Hold a sharp knife over a flame (gas hob works best as you have to do it for each mint) and then use to cut the mint, the edges don't crumble & self-seal this way, Wipe the blade & repeat for each mint.

    Poached PearsThis is a lovely recipe for those wanting something less heavy, yet it still looks wonderful and has all those christmasy spices.

    Peel some firm pears (I like conference best). You can either leave whole or quarter.
    Place in a pan, cover with red wine, add a few tablespoons of sugar, a cinnamon stick, a little nutmeg, a star anis if you have one, or a few cloves ( spices depend on what you have in your store). Poach gentley for about 30 mins and then leave to cool in the liquid. The pears will turn a wonderful crimson colour if left overnight.

    Serve chilled with either cream (sinle is fine) or ice cream.

    This can be prepared days in advance and improves with keeping - is fine for children as the alchol is burnt off in cooking. Can also be prepared with white wine or cider - but you don't get that Christmasy red!

    I'm just going to say it...

    I HATE Christmas pudding! There's something about fruit cake that really doesn't do it for me!

    Anyone have any good alternatives that I can buy/cook myself?

    All ideas greatly appreciated!

    I love sticky toffee pudding for christmas day pud, i usually get the individual microwave ones but recently tried taste the difference sainsburys, think thats what i'll be having again!
