recipe for a christmas type desert wanted

    My dad (who used to be a chef) does this thing for people who dont like Christmas pudding. It's black cherries soaked in rum or brandy on the bottom then a layer of fromage frais. Then he sprinkles brown sugar on the top and then either puts it under the grill or uses a blow torch on it to make the sugar crunchy on the top.

    For the less calorie-conscious try it with mascopone cheese instead of fromage frais :xmassmile Oh excellent, Xmas smilies....thanks Martin/Martin's tecchy people:A

  • Can I ask a silly question? That pavlova sounds really nice and so does the Christmas icecream. Could I fill a pavlova with ice cream instead of cream? If so, would I make the icecream, fill the merangue and put it all back in the freezer?

    With the berries and fromage frais, what kind of fruit do I need to soak? (dried, tinned, fresh?) This sounds ideal for (a) Diabetic MIL and (b) Xmas pudding hating hubby!

    Don't normally have puddings :o

    My mum sometimes does a quick icecream / meringue type pud.....

    1. Basic sponge bottom (one of those large sponge flan / tart type cases).
    2. Make your meringue mix
    3. Put icecream (and anything else requiredetc...) on the top and in the centre of the sponge bottom.
    4. Dollop the meringue mix on the top of the icecream (making sure to cover all of it, otherwise it will melt later)
    5. Bung the lot in the oven until the meringue is cooked....and then serve.

    Don't ask for temps, as I can't remember them. Its one of those quick puds that she makes every now and then.

    Edit: And no before anyone asks the icecream doesn't melt...at least it doesn't when she does it anyway.

    I'm not sure whose recipe this is but someone gave it to me a few years ago.

    Christmas Cake - an unusual recipe :confused:

    1 cup water 1 tbsp salt
    1 tsp baking powder 1 bottle whiskey
    2 cups dried fruit 8 oz nuts
    lemon juice 1 cup sugar
    4 large eggs 8 oz butter

    Sample the whiskey to check for quality. Take a large bowl. Check the whiskey again. To be sure it is of the highest quality, pour one cup and drink. Repeat.
    Turn on electric mixer, beat two ounces of butter into a fluffy bowl. Add one teaspoon of sugar and beat again. Make sure whiskey is still OK. Cry another tup.
    Turn off mixerer. Break two bowls and add to the eggs and chuck in dried fruit.
    Mix on the turnerer. If the fried druit gets stuck in the beaterers, pry loose with drewscriver. Check whiskey again for considedty.
    Next, sift two cups of salt or something. Who cares? Check whiskedty, sift lemon juice and strain nuts. Add one table. Spoon. Sugar!
    Grease oven. Turn the cake tin 350 degrees. Beat off turner and throw bowl out of window!
    Check whiskey again and go to bed. :-X
    Next day, take three aspirins and go to M&S to buy Christmas cake :snow_laug :snow_grin

    Failing that, you could always make a festive ice-cream, either as a substitute pud or to use up left-over xmas pud afterwards ...


    400g mascarpone
    200g icing sugar
    4 egg yolks, beaten until pale
    125 mls Cointreau
    250 gms Christmas plum pudding
    1 vanilla pod, seeds scraped out

    1 Mix the mascarpone, icing sugar, vanilla seeds and beaten egg yolks together thoroughly, and then whisk in the cointreau.

    2 When the mixture is smooth, gently stir in the crumbled plum pudding. Pour into a plastic tub and freeze for a minimum of 2 hours.

    3 Serve garnished with another splash of cointreau.

    we usually go for an easy to make pudding the favourite being put some ice cream into a dish,take a bag of malteasers(!!!!!! the bag with a knife to let the air out )and bash the bag with a rolling pinjust to break the malteasers.open the bag and sprinkle over the top of the ice cream.its quick and tastes yummy

    :snow_grin really pleased with myself - made a really easy, great dessert last night (which I'm going to do again for New Year) after bagging some bargains in the supermarket.

    chocolate mint cheesecake - ordinary choc cheesecake recipe but the base was made with McVities milk chocolate mint digestives (didn't even know they existed untill I saw them in the bagain bucket). Melted some chocolate after-dinner mints, and when cooled, dripped them in a fetching pattern over chilled cheesecake... et voila!!

    I did also try to cut up into quarters some of the after-dinner mints to decorate the top but the edges crumbled too much and didn't look very attractive. If I'd have enough cream, I suppose I could have piped blobs around the outside and stuck the quarters into them, hiding the edges.

    And after we 'd eaten most of it, I found I'd forgotten to use the sugar dipped mint leaves that I thought would look attractive!

    As a result of this thread, I'm going to try something else (an eton mess type thing) over the weekend - as a trial for the Christmas hols.
