Do you live near a Waitrose ? Their free mag (the Christmas food one, not the one that's the usual monthly magazine) has loads of really lovely recipes in it.

Choccy Swiss Roll Ice Cream Cake.
Line a bowl with clingfilm - brush with a little butter and then add thinly sliced swiss roll (HM of course) to cover the whole bowl - no gaps.....looks really quite funky.....then fill the resulting swiss roll bowl with choccy ice cream...more swiss roll on the top (bottom) wrap the cling film over and bung in the freezer for a few hours.....
Turns out easily - carves well and you can just put it back in the freezer if you have any left.

there was a lovely idea in the somerfield magazine last month about mixing chunkc os xmas pud through softened (NOT defrosted) creamy vanilla ice cream, and then putting back into the freezer.

Years ago when microwaves first came out my mother decided to cook the christmas pudding in it, of course she nuked it for too long so the middle was burnt. After a bit of a mad panic over what to serve everyone she cut up squares of ice-cream, covered the sides with After-Eights and sprinkled mixed nuts on the top. Not very fancy but I loved it because I hate Christmas pudding and she used to make me eat it every year!Dum Spiro Spero0

I tried this recipie at the weekend and its very nice and Christmassy.

Cranberry trifle.
Cook about 250g of cranberries for 5 to 10 minutes with a little sugar so that they are still cranberry shaped.
Soak trifle sponges with cointreau. Pour cooled cooked cranberries on top and then top with custard and cream. Grate chocolate on top. Very seasonal and not too sweet.0 -
My dad (who used to be a chef) does this thing for people who dont like Christmas pudding. It's black cherries soaked in rum or brandy on the bottom then a layer of fromage frais. Berry Millefieulle
one pack of puff pastry rolled out and cut into two rectangles. Brush with milk, sprinkle with caster sugar and bake until lightly brown.
Melt 2 tbsp jam and spread on one of pastry pieces, spread with:
Mix 250g tub of creme fraiche with 2 tsp icing sugar
Add berries top with other puff pastry piece, sprinkle with icing sugar and voila, a simply delicious, good looking pudI haven't got one!0
