    Thanks Frugal, it's in the oven now! I haven't put a lid on it, would you/should I? Will be serving with mash and cabbage :)

    I would leave the lid off so it can reduce and thicken a bit... Depends on how thick your sauce is. If its thin, leave the lid off :)

    Whereabouts are you? Might pop round for a free meal :rotfl:

  • I am at my mums for tea tonight, and she had taken 4 chicken drumsticks she got for 50p from M&S out of the freezer, and once defrosted she chucked them in a pot with water, grated carrot, grated neep, onion, leek and seasoning, boiled it all up then simmered to make soup (tasted ace!). She them stripped the meat off the drummers and is using them in a chicken pie tomorrow (I am staying for tea tomorrow too - yum!!). For my actual tea tonight we had defrosted pheasant breast (shot by my Dad!), sliced thinly and stir fried with veg and rice. I LOVE coming here for my tea!!
  • Hi getting really bored with the same old meals and could really do with using some bits up from the freezer. I have a few packets of chicken drumsticks and chicken thighs bought for summer bbqs that never happened so what would you make from them? Could really do with some recipe inspiration.

    Week 10,total weightloss is now 13.5lbs Week 11 STSweek 14(I think)..-2, total loss now 1 stone exactly
    GOT TO TARGET..1/2lb under now weigh 10st 6.5(lost 1st 3.5lbs)

    Or chicken casserole?
    Or a version of spanish chicken beany one pot with chorizo, tin of mixed beans and peppers (also quite summery feeling despite the cold weather and always a fav in our house)?
    Or cook the chicken off and make a pie with a condensed soup as the sauce?
    Or do a chicken pasta bake?
    Or plain chicken in breadcrumbs?

    Can you tell I like food?! :rotfl:

    We love honey & mustard chicken pieces served with chips. Simply mix equal quantities of honey and grainy mustard in your baking dish, then turn the chicken pieces in it to coat. Cook in a medium oven, turning and basting with the h&m sauce regularly until well cooked. If you make enough of it, there will be a nice sauce to dip your chips into! Yummy.

    Delia also has a Spanish chicken recipe that is great with leg meat and is very forgiving about re-heating and sitting round waiting for folk. And it is a one pot meal.

    I just smother them in any old bbq sauce and roast on high for 10 mins then turn them down til they are cooked :)
