  • Hi chatterboxes. I'm never going to catch up with you all. Still hanging on with my dailies and not a great deal else. I'm determined it will get better one day, but probably not before changing my job and finishing the decorating.

    Off to make dinner coz I've to be at college in an hour!:eek:

    Hope everyone's OK and I might catch up on the thread by the weekend!

    Today I have achieved my dalies and wiped the grot from 2 kids rooms - not great but not bad.

    Just going to feed the cats and then have a quick hoover round whilst tea cooks.

    Another days work done, well sort off, its taken me all day to clear out that wardrope, and sort out all the rubbish. Ended up clearing out all the old bed linen that I dont use any more. AND THERE WAS NO SPIDERS WHOOHOO:j

    DS#1's bedroom was okay, window needs cleaned, so I will do that tomorrow, as well as hoovering the floor. Im too knackered to do it today.

    Off to start dinner, will read up on the posts later.

    Here is how things look this evening- got quite a few of my dailies done and a few from Flylady List.
    Tomorrow will be whats left from my list and also level 1 (and maybe 2) from the Flylady Thursday list. Hope you all got on ok, I am still tired :confused: but also feelng happy :D.

  • For those that asked... kazmeister and rach. here it is, hope you like it!
    This is how this recipe was taught to me, I'm sure other people have their own version. The allspice and thyme are non-negotiable if you want anything resembling authentic!!!

    Jamaican Stewed Chicken

    serves 4

    8 pieces chicken (thighs & or drumsticks - this is not for boneless breast!)
    3 onions roughly chopped
    juice of half a lemon
    1 red pepper
    4 cloves garlic (more or less, depending on how much you like garlic!)
    3 fresh tomatoes – roughly chopped
    1 inch fresh ginger peeled and chopped (or 1 generous tsp dried ginger)
    1.5 tsp ground allspice
    4 good sprigs of thyme (or 1 generous tsp dried thyme)
    1 tsp salt
    1 tsp ground black pepper
    1 tsp paprika
    0.5 tsp chilli flakes

    Put the chicken in a large bowl.
    Pour the lemon juice over and rub it in.
    mix the dried spices together ( I like to do this in a little bowl, to really ensure that when I coat the meat, the spices are mixed evenly)
    Sprinkle spice mix, S&P, chopped garlic and ginger over the chicken pieces. really mash the seasoning into the chicken with your hands, get it really coated.
    Leave for at least 30 mins, or overnight in the fridge is even better.
    Pour some oil into a casserole/pot with a lid. A nice big one, that can be used on the hob.
    Brown the chicken to seal the juices inside.
    Put your chopped vegetables into the large bowl to mop up any of that lovely seasoning.
    When brown, remove chicken from pan, leaving the oil.
    Throw in the seasoned vegetables, let them fry and sizzle for a few mins.
    Then put the chicken back in the pan with the veg.
    Give it a good stir.
    Add 1/2 pint water. Bring to a simmer, leave simmering with a lid on for about an hour and a half, stirring occasionally. It shouldn't boil ferociously, or the chicken will disintegrate! Nor should it stick and burn. It can cook in the oven, (or in a SC I guess, not having used one.) It does benefit from long slow cooking. The aim is keeping the chicken intact, but having a mulchy sauce!

    Serve with rice.

    Any of those spices/ginger/garlic can be increased or decreased to taste. Personally I love the robustness, it’s not really s’posed to be a gentle taste!

    Evening everyone,

    Sorry that I haven't posted for a couple of days - have had quite a bit of supply this week, and I'm not used to full days any more - today was a bit of a nightmare, as although I was in the same school, I had Year 3 in the morning, and Year 5 in the afternoon, which meant I had to mark 30 literacy books and 30 numeracy books in the lunch hour, eat my lunch, and then find out from the Year 5 teacher what I was doing in the afternoon, so it was all a bit frantic. I've got quite a sore throat now, and I'm hoping it's just because both classes were very chatty. I'm back at the same school for just the mornings in Year 6 tomorrow and Friday, and they have booked me up all week next week too! :) I'm in Monday AM, Tuesday and Wednesday all day, and Thursday and Friday AM. The agency said they would see if they can find me something for the Thursday and Friday PM that is nearby, but tbh I don't really mind not doing the PM as it will be a mad rush again to get all of the marking done in the lunch hour, eat, and find the next school and what I'm meant to be doing.

    Hugs from a distance for all of the poorly people. There seems to be a lot of it going around at the moment in the schools so I'm keeping my fingers crossed that I build up an immunity so I can still work - that's the only downside to supply - no paid sick days.

    Unfortunately I started my MACAW challenge with the best of intentions, but didn't do my load of washing yesterday, and can't be bothered to do it tonight, as it means having to empty the TD and put it all away first, I'm cold and hungry and I just don't want to do anything at the moment.

    I'm on to my second cup of Redbush tea since I've been home, and have had a long chat with "leaky neighbour's" Mum. She thinks possibly that the WM's filter needed cleaning and that this could have been the cause of the leak, but she's not sure. Have also consumed two pieces of milkroll (reduced) toast with Pure and strawberry jam on and I'm still starving. Hoping OH comes home soon so we can have dinner (beanfeast chilli, rice and sour cream) - he's round at his Mum's.

    Serena, I hope you are feeling a little bit better and that the family haven't all gone down with the bug. Have you had much supply lately? Have you been back to the school where you were having a tough time? Thanks for the joke email btw - it was really funny, and OH roared with laughter.

    I have to admit that I've been a bit lax on the flying front lately, and could do with a good kick - think I've talked myself into giving the living room a once over with the hoover as that'll warm me up a bit - I've got my duvet booties on that I bought from Lidl on Monday, and my fleece, but still can't get warm, and OH would kill me if I put the heating on.

    Do they do the cooking too? Much use them doing the pots if you're still hungers after?:D
  • Dinner has been had (beef stroganoff - my favourite, and everything came from the storecupboard or freezer except the onions) am nearly at the end of my grocery challenge and things are a little tight... Especially as i have to get my car serviced and MOT'd and get new tyres tomorrow:o My lovely mum has offered to pick me up and take me to uni in the morning so i only have to miss my afternoon tutorial.
    Just going to empty DW and WM, do the dishes, put LO to bed and do some studying. Just spent £60 on 2 books for uni and am watching a 3rd on ebay:eek: It ends in 1hr 47 mins, i hate waiting, i get nervous.
