Champys what is your recipe for courgette/goat's cheese crumble?
Hi melli - believe it or not, this is a French recipe. You need:
700g courgettes
2 tbsp semolina or couscous
200g goat's cheese
2 tbsp chopped fresh mint
2 tbsp olive oil
30 g chopped walnuts
30 g breadcrumbs
salt & pepper
Grate the courgettes (unpeeled) into a sieve or colander, press to get rid of excess liquid. In a bowl, combine goat's cheese and mint. Add the grated courgettes and couscous. Season and spread into an oven dish (or the Remoska!). Combine walnuts, breadcrumbs and olive oil, and spread on top of the courgette mixture. Bake for 20 mins at 180°.
According to the recipe this should serve 4 (which is a little optimistic) and calories per portion only 148! So if you eat a double portion you are still doing quite well.... MIF=meat in freezer; FHM=frozen home made
Fri:- gammon & mushrooms in tomato sauce, served with pasta Bone bits & pasta
HM pizza
Chicken breast MIF
Mince stuff FHM [label's fallen off so could be cottage pie or spag bol]
Roast pork MIF
Cold meat, pickles & mash [from roast]
Beef & taiter pie MIF
Bone bits with couscous
HM pizza without onion
Ox liver casserole MIF--will make two portions with either rice or pasta
Chicken casserole
Roast pork
Serves three purposes this week--a/ trying to empty freezer to clean it ready for crimbo onslaught :eek: b/ using up what I have already got& c/ can I actually do this meal planning :cool: ...time will tell.......

Here's my effort!
- Friday - thai red curry with quorn pieces and rice
- Saturday - will make a veggie chilli to use up peppers, onions and mushrooms but will probably have tea out at the cinema
- Sunday - maybe out with OH? Chilli if not
- Monday - gnocchi and sauce
- Tuesday - jacket potato, beans and cheese
- Wednesday - tuna bake and garlic bread
- Thursday - bombay potato
- Friday - crispy quorn fillet and wedges/chips

Loads of lovely plans this week. Mmmmm @ lamb shoulder and courgette & goats cheese crumble. Note to self - do not read mealplans thread when I'm already hungry! I'm starving now!!!
Anyway..... I'm back to starting my plan on a Friday, so here we go:
Fri Take away pizza - once a month treat fron local Italian restaurant. Yum.:j
Sat Sweet potato, cauli & spinach curry(from stash in freezer) with HM Naan bread & rice
Sun Cheese & red lentil loaf with roasties, veg
Mon HM Pizza & jacket spuds
Tues Tarrogan or lemon chicken in SC
Wed Paella
Thur Falafel, salad & HM pitta bread?

This is my favourite thread, I don't know anybody in RL who does mealplans (except my mum!)
I love coming on here to have a nose + get loads of ideas - but I agree it does make you hungry!!
[STRIKE]fuzzy felt - If it helps you can do your jackets spuds in the slow cooker, wrap in tin foil and leave on low in your slow cooker and they get gorgeously soft and fluffy (no crispy skins though unfortunately). Sorry if you already knew, hope i'm not teaching 'gramma to suck eggs'! I just got my slow cooker this week and i'm super enthusiastic to use it for everything so tried this with sweet potatoes last week.[/STRIKE]

I also have a slow cooker, so I might give the jacket spuds ago. How long do you reckon and on low or high? I guess they might crisp up a bit if I put them in the oven with the pizza afterwards.

I think mine were on for roughly 6 hours on the low settting, i'm sure you could give or take a couple of hours to fit with your plans.

Afternoon All,
Friday again and time to think about next week's meals - you all seem to have families with reasonable taste buds - mine are very restricted in what I can do and they will eat!!
Anyway - here goes:
Friday - Sandwich tea before choir and club
Saturday HM burgers and HM rolls
Sunday - at a Christening Party!
Monday - HM Shepherds Pie well cottage really I don't eat lamb.
Tuesday - Toad in the Hole
Wednesday HM Chicken Casserole - jacket pots
Thursday Spag bol or similar
Variety of puddings depending on what cheap fruit I find on the market tomorrow! oh and depends on the weather as to what I make!

Hello :beer: We're having friends over for supper tomorrow (it's our choir's concert :eek: ), then DH is away with his brother for most of the week. DS is doing a 25 mile walk and an overnight camp with scouts, and DD is out to an overnight party tomorrow. So the plannign for the weekend is pretty fluid
Friday - fish and chips
Saturday - veggie chilli, HG baked potatoes, HM bread rolls, HG salad; Jamie's toffee apple tart, fruit salad
Sunday - beef and dumplings, HG sweetcorn, beans, carrots
Monday - seeking inspiration from some cubed turkey leg I bought on a whim :rotfl: :rotfl:
Tuesday - chilli, rice, HM naan, HG salad
Wednesday - questadillas, HG salad
Thursday - spinach and ricotta pasta
Friday - pizza
I made HG roasted pepper and tomato, and cheese and olive bread for lunch today. There's plenty for tomorrow, too. I still have some cake left, but will be making muffins and buterfly buns tomorrow.
