I've got some ricotta in the fridge and was going to whizz it up with some tinned tomatoes to make a pasta sauce, adding bacon, mushrooms, onion, garlic, and courgettes.

This should work OK, shouldn't it? Also, any ideas on quantity of ricotta to tinned tomatoes, I might make double and freeze the rest, but don't want to make too overpowering a sauce.

    TIA

  • I would probably put the ricotta in at the end so it doesn't separate in the heat. I'd go for a tablespoon per portion of sauce.
Not sure how well it will freeze and reheat either...

Hi, anyone any strong opinins on how long to keep rice? I had rice in the fridge i cooked on Sunday. I had made biryani and completely forgotten about it. I have just had some for dinner.

Looked up Food standards agency who say
Don't keep cooked rice and grains for longer than two days and don't reheat them more than once.
    1) Should i make myself sick (I am joking really....)

    2) Would taking it to work tomorrow be pushing it? Darn darn darn, cant believe i made such a large quantity and forgot all about it. Hate waste.

Also asked in the tuna thread - how long would u keep tuna once open - in airtight container in the fridge? Couldnt find anything on FSA website. It smells ok, but i dont want to put myself off by smelling off tuna, as that would put me off for life...
A little nonsense now and then is relished by the wisest men
