I finely diced everything -- would have taken me longer to find the bits for my food processor (don't think I've actually used it since we moved in -- which was May 2002 -- and I certainly didn't use it in the rental from the previous September !!)

It's cooked -- I just need to "bottle" it now -- but didn't end up as thick as I'd expected (despite leaving it to reduce for hours  ) and I'd followed the recipe to the letter (give about 30g apple and take about 2ml of vinegar ;) )

How long do people normally leave it before consuming? And does the flavour change any while it matures? As it is now I have to confess it's a tad sweet for me as a savoury pickle (and this from someone with an incredibly sweet tooth).

I have enough of everything bar the ginger for another batch -- but was wondering how it would turn out with less sugar? Has anyone tried this??

Now I need to see if I can find some jars from somewhere, as I think I'm going to struggle to squeeze this batch into what I have thanks to DH keep ditching them in the recycling bin !! And I don't normally notice he's done it until the lids are well buried in the normal bin either :(

  • Iguess its a personal taste thing cw! I'm not wild about bitter chutneys and am quite fussy about the texture....I use really dark brown sugar which I think adds flavor. Re the jars you can get really nice sealable ones from places like ikea/dunelm/the range for about a quid...I find the ikea one a bit flimsy though...or as we discussed lat week go for the 6p jars of mint jelly from mr t's!! Did anyone come up with a good recipe for the contents thouh?! Very unweezilesque to chuck it!
Off to baby clinic today and may look for some fabric for my bathroom blind that I will make. How are people getting on with fergus' baby shower stuff? Must confess I havent started!!

I managed to get the one batch into the jars I had -- just !! But only 'cos one of them was a large Branston one ;)

I now don't have a single jar left in the house (or not one with a lid -- looks like I've managed to rescue a couple and DH has then thrown the lids..... and one of them was a huge pickling vinegar one I use for my marrow chutney so I'm not best pleased ).

I've [STRIKE]asked[/STRIKE] told DD to save any clean glass jars -- with lids -- that she uses (no recycling pick up for them at her place yet, so they go into the normal bin!!!), and am debating asking a few neighbours to pass to me instead of putting out for recycling ;)

  • Hi guys :hello:

Been busy catching up on work so haven't been on here much lately but felt the urge to catch up a bit and see how everyone was getting on.

This thread always seems to make me hungry. :o There is a new magazine out here (NZ) that has great cheap recipes in it, and I bought one as a treat (magazine is cheap too), and will have to come and post some things.

Am dying to try the pumpkin hummus, but don't have a food processer, was going to buy myself one for xmas if I have saved enough by then lol. I am quite excited about the idea, as never had one, and my mother swears by them hehe...would save me a bit of time and effort too, and worth it just to be able to blitz whole peeled tomatoes from a can into a puree...

Anyway, :kisses3: must run off to bed nite all

oh yum ... any chance you could post the recipe for pumpkin hommus? 2 of my favourite things together!!!

    thank you xxx
  • I tried pumpkin recently, but thought it was far sweeter than I expected (hence pumpkin pie I guess :o ). Also disappointed that I'd been looking forward to the squash season, but have given up on them too as they are too sweet for my liking. Anyone else had similar experience, or have I just been unlucky in the ones I picked up? I guess I thought they'd be similar to butternut squash, which I adore!

Veggie burgers recipe, shamelessly stolen from another thread (apologies to the author as i can't remember who it was)

I thought these finally fitted in with Weezlite 50p a day [veggie] challenge I have been trying  .

    Ingredients:
    Lentils
stuffing mix (Mr T value sage & onion14p)
    Mixed herbs (optional)

You need equal quantities of lentils and stuffing mix (cooked/made up)
Cook lentils down to quite a thick consistency. Make up stuffing mix, reserving some for "breadcrumbs". Combine stuffing and lentils and shape into patties. sprinkle both sides with dry stuffing mix and cook under a grill until browned.

Not sure about costings but the orignal thread said they got enough to serve 8 hungry people and when served with HM bread rolls came to 15p a portion.

ISOM - baby shower pressie started.... but not as started as I'd have liked. Is on list as a 'priority'

Just been checking my meals s/sheet to see how I'm looking for reaching the main meals 50p per person per day average over the month. Thought DH had scuppered this yesterday due to an early 'I fancy' only to decide as I was about to start cooking he didn't after all !!!!

BUT....... after entering todays figures (and after another attempt by DH to scupper the best laid plans) it's looking vaguely possible :)

As long as tea tomorrow doesn't come in at more than 37.53p each then I've done it (that would make it exactly 50.00p).

So I need to look through what I've made in the last few months, select a few meals that fit that criteria (or can be adapted to do so), and then find the strength to tell DH tomorrow morning he can select from those and nothing else :rolleyes2

  • well done cheryl

I am quite good at frugal meals but can't get the average spend down but then meat is organic, and i spend a lot on bulk buys and i reckon 6 months food in hand at least .........

I totally love squashes, butternut especially. After having a tip from my housemate I like it cut up without peeling and roasted with a little oil and some chilli salt, amazing! I have been doing allsorts with pumpkin, we had a pumpkin pie, some pumpkin soup, roasted pumpkin seeds and I cubed some to put in the freezer, some of which I mashed and put in some buns I made. It is very versatile, sweet or savoury. If it seems to sweet try adapting the butternut squash stuffed with couscous/rice etc to the pumpkin in sections or slices if it is too big. It is fab roasted and goes really well with a roast dinner too. HTH

Oh, and I carved my first pumpkin out last night, it was lots of fun!

    Hello all,

Er, when i said 'third thread' I meant third for all Weezl's challenges, not third for '50p per day [inflation depending!]' !

I tried the mash pizza yesterday. I added some leftover butterbeans to the spuds and pureed the lot with a hand blender. The tom sauce had carrots in it (that was also pureed with a handblender, can you tell I have just been handed-down a handblender?!). By the time it was topped with some spinach (and cheese), it contained 6 types of veg - result! It was really tasty too!

It is really scrummy with sweet potato and onion in the mash as well and i also put swede/turnips in sometimes:rolleyes: /trouble is you have to eat with a fork, but yum:D
