    hello!

a few pages back, someone posted, saying they had made apple jam. apologies, 'cos i can't remember who! please can i have a recipe? i have lots of apples still, and i have so much stewed apple/apple cake, that i need to do something else with them! or can i make it like i have been making all my other jam? equal quantities of fruit & sugar, then boil, simmer, jar?!!

loocyloo, that was me with the apple jam. Here is the recipe I used. I got it off this site and it was easy and yummy. I must admit hubby seems to like it in his porrige in the morning as does not eat a lot of toast.

    HTH xx

    Apple Jam
7 cups Apples (Peeled & Cored)
    6 cups Sugar
    1/4 cup Lemon Juice
    1 tsp Cinnamon
    How To Make
    1. Before you start, make sure that all the apples have been thoroughly washed, peeled and cored.
    2. Slice up the apples finely and place in a large saucepan over a high heat.
    3. Add the sugar, lemon juice and cinnamon while stirring continuously.
    4. Let the mixture boil for about half an hour until thickened, removing any scum that may rise to the surface.
    5. Pour the mixture into jam jars, seal and store away.

Had a cheap day today, not sure of the amounts but can't be much

Brekkie - Tesco Shreddies & sultanas
Lunch - HM Tomato soup (from the garden) with HM Bread
Dinner - Spag Bol made from Mince Base (1 pack of mince cooked in SC with lentils, porridge oats, onions, soya mince, stuffing mix, herbs, split into 4 portions) with tinned toms, herbs, garlic, marmite(!), tom puree. Pud was cinnamon & raisin loaf that was BOGOF.

I even had enough Bolgnese left to put some in the freezer. Sometimes I wonder how far a pack of mince can go and how many times can I recycle it! Must freeze smaller portions of mince base in future as theres usually too much once I made it into something, chilli, bolgnese, cottage pie etc!

Gonna wait for dinner to go down a bit and then out for a run, got my 10k run in about 10 days:eek: and then maybe some cross stitch, trying to finish my xmas things I got a while ago and starting to panic about how much I've got to do before xmas! :xmastree:

Evening guys! Made a smashing meal for dinner last night and felt I must share the recipe. I think I got it from an American website and it goes by the rather curious name of "Cabbage Rolls" Hope somebody finds it useful.

    Cabbage Rolls

    1 lb lean minced beef
    1-2 onions chopped
    1 tsp salt
    1/8 tsp pepper
    1 cup long grain rice
1 can tomato soup (condensed) (I only had Meditteranean Tomato)
    1 can mushroom soup (condensed)
    1 soup can water
    3 cups cabbage, shredded

Shred cabbage and place in a large dish. (I used a large lasagne dish, and around ¾ Savoy cabbage).

Fry Meat and drain off fat. (I also added garlic, diced red pepper and mixed herbs)
Add onion, salt, pepper and rice, stir.

Add soups and water, mix well.
Pour meat and soup mixture over the top of the cabbage. DO NOT STIR!!!

Cover pan with aluminium foil, and bake in a preheated oven Gas 4, 180° C, 350° F for around 2 hours.

It is yummy and so simple to make.
    Enjoy!!

    Hi loocyloo,

I use an 8" silicone cake tin mainly, sometimes a square one but the slices are bigger in the round one. :D

Glad you liked it and I'm pleased you reported back on using water, too. Now I don't need to worry if no 'prune juice' around. ;)

    thanks for that list JammieDodger

I remember reading that a portion is the amount you could hold in your cupped hand. I find this a useful thing to visualise, especially when I'm serving the children (or worrying about how much fruit they've not had that day!). As their hands grow -so do their portions!

  • Hi all Weezl-ites

I have been conspicuous by my absence here for a while. (Have you? They all say:rotfl: :rotfl: ) No excuses really, I try and post on the daily every day but my life is a bit upside down at the moment as I am up late most nights talking to a friend in America who is not well.

I have missed this thread though as I always love the tips and recipes and the lovely 'atmosphere' you have here. Here and the Daily are so cosy, it's like putting on a wooly jumper or getting a hug at the end of a day.

Anyway, I lost all my OS recipes when the puter went pfuttt on me so have been collecting them back up again. Been posting my own recipes for picalilli and pickled cabbage etc over on the daily for people so if anyone would like them just PM me.

I haven't been to bed yet so my head is full of cotton wool. Will endeavour to get back here later or tomorrow.

    *big hugs* to everyone.
