    Botulism is a big risk in low acid foods hence the pressurised canning process

    There is tons of information out on the web and am pretty sure someone will have better advice than this. It really is important to be ever so careful.

    I can only speak from watching my granny and others but without a pressure canner or the like. They used to put the hot vegetables into hot jars and then water bathe them, making sure the jars were completely covered in water for 20 minutes to make sure everything was cooked and killed off so to speak. This is how I was originally taught to do it myself. Never had any bad experiences but may have just been lucky as well.

    Would sure hate to hear of anyone getting ill or worse!

    Well, did I ever have a morning and a half. Woke up (well, I'm not actually sure I fell asleep) and felt terrible, think I'm coming down with other halfs flu-ness, Joy. Went with him to station and came home to collapse in sofa for an hour before I went to work, and then the gods must have been smiling on me coz work rang and said they're overspent on wages and did I mind having this morning off (I do splits sometimes) so I've managed to have a nice long relaxing daytime,well, for me, I have relaxation issues. I managed to do a laundry load, empty the dishwasher, wash the handpots, made breadrolls (for burgers) and put the pots away...and tidyed the living room and bedroom floors...but dont tell him I did all that coz he'll yell at me...I did lay in bed and watch a movie ( Juno, fab!!!!!) which is about as relaxed as I get!!

    I've been looking into allotment-ing, but I'm torn between thinking it'd be nice to have yummy food from my own handiwork and fab exercise (I don't have a garden) and thinking Argh! the hard work. Just emailed the department to see if I can find out more info...we'll see how it goes I guess.

    Well better get ready for my evening shift, wonder what sort night I'm in for.

    You could always share a plot with another interested gardener - Someone on my local Freecycle asked for an allotment partner recently!

    Also, my sister and I enjoyed Juno hugely.

    Morning weezilites....dont worry c was only joking - we all have to manage our own budgets but the point I was making was that we're meant to be being more frugal!! Have decided to make liquorice ice cream so will do merange for pudding on sunday to use the egg whites and will save aple crumble for a later date...also hard to transport without a n other in the car! Todays plan is go slow but try and blitz the plot and do a measured amount of listed shopping!! Need some fabric for class but will try and get off cuts and do some haggling!!

    To stop my family getting sick of apple crumble, I've also been making apple amber recently - which basically is stewed apples topped with meringues. I mix the egg yolks and some lemon juice in with the stewed up apple but I'm sure it would work just as well with the yolks for when you need whites used up.

    baked at about 160 for 20-30 minutes gives a nice gooey meringue topping

    Afternoon all

    Hmmm on the botulism front.. Thats one of the reasons I wanted a gismo that has various temp settings on so there is less room for error -than me just shoving bottles in a pan and guestimating :p plus I will pick my mums brains and look out for a good book on doing it properly :A :rotfl:

    I have been out clearing the last of my tomatoes... It was deffinitely frosty out there this morning, plus i spotted someone near by who had blight -their tomatoes..not them :rotfl: ..so I thought I would beat it ;) my plan was to put them in the window bottom to ripen... didn't bargain on having 11lbs out there :eek: :rotfl: ..hmmmm need more windows :p .. I allready have one window full, plus some ripened in the kitchen... :o ... Im going to have a bash at making pasta sauces and trying out the bottling... then if it does go t*ts up at least it won't be all my produce gone ;) -allready have over 40 bags of roasted tomatoes/veggies in the freezer:T

    right -off to finish of making the shepherds pie for dinner :D nomnomnom

    I have been roasting together squash,courgettes, carrots, peppers, celery onions,garlic and tomatoes in the oven with olive oil a splash balsamic loads of homegrown basil a few chilli flakes and salt and pepper until lovely and soft and a bit charred then blitzing it makes a lovely past sauce but could be used as a base for other dishes ,when you see the colour (very pale red) it makes you wonder whats in all the bought sauces

    Not got quite so many as you Mrs M but enough for a touch of summer in the depths of winter:D

    Picked all my tomatoes(about 20lbs!!) too have emptied my fruit bowl and put them in there with a few ripe tomatoes and they seem to be ripening at a steady pace so a few more batches yet


    Having a quick fishfinger oven chips and beans tea as was 2nd day at uni ,induction is so draining can't wait for real lessons next week

    Hi everyone

    I'm still here ........ just :rolleyes: ! My house is a total mess and i'm trying to not let it bother me but I can feel myself getting more and more pent up about it :mad: ! I have no upstairs hallway carpet, holes in my ceiling, stuff all over the place because i've had to move furniture so the pipes can be re-routed (very old and ineffective system) and to top it all off, i've got my darned 'ladies problems' :( .

    I don't think the engineer will be done tomorrow either - he thinks he'll still be here on Monday which means I won't even have the weekend to clear up.

    Anyway, nuff of my doom and gloom lol ........ am sitting here with a nice glass of wine (hubby spilt his :rotfl: ! hahahah - he's not having mine !!!!)

    Hope everyone has had a good day - am going to have a nice evening catching up tonight and keep my back to the ever growing mess :wall: !
