Anyone got any tips for getting hand made bread lighter? The recipe for stews look nice....Nerd no 109 Long haulers supporters DFW #1! Even in the darkest moments, love and hope are always possible.0

I have been rather absent of late but have really enjoyed the company and the recipes when I have been around.
A huge thank you to Weezl and AM and Good luck with you biggest adventure yet - parenthood - something I'm sure you both will excel at.
Thank you also to everyone else as you have all made the thread rather compelling reading (although very time consuming!)
Hoping to see you all around.

just read Weezl's farewell speech...blub!
Thank you Weezl so much for allowing us to be spectators on your journey. This thread has certainly made a lasting impact on our family.
making the no-knead bread has now become a regular part of my week.
I can't wait to pick nettles in the spring, and now eagerly look out for foraging opportunities wherever I go.
I can't help making rough mental calculations as to the price of everymeal - but yes, alas, 50p seems to be an unobtainable goal
All the best with the new great adventure - motherhood. We know you won't have much time for posting but hopefully you'll drift back into the forum from time to timeweaving through the chaos...0 -

Anyone got a suitable vegetarian stew recipe I could use please?
Hi Ceridwen,
We have veggie stew at least once or twice a week in this weather. Our basic 'recipe' is to saute onions and garlic, add sliced carrots, chunks of potato (new or old), sliced celery. Add boiling water to cover everything by a couple of inches (you can always add more), 3-4 stock cubes, salt/pepper, mixed herbs (we generally use cheap mixed herbs, rosemary), a splash of veggie worcester sauce if you have it. Once the liquid is in add a handful or so of that soup mix (pearl barley/driedpeas/splitpeas type mix). Leave to simmer for, ooh, about 15-20 mins? Til the potatoes are *just* starting to soften. Then add in canned or precooked beans (borlotti, chickpeas, kidney beans, whatever), any quick cook veg you like (we do green peppers/frozen green beans/sweetcorn, if we have them), dumplings if you're having them, and simmer til everything is cooked! If its not thick enough add a bit of gravy powder.
Dumplings here are 2oz veg suet, 4oz self raising flour, and a good few tablespoons of cheapo mixed herbs!. Mix with just enough cold water to make sticky dough, shape into rough balls (don't handle it too much or you get cannonballs!), plop on top of the stew and simmer with lid on for the last 20 mins of cooking. They should go fluffy looking when done, but easiest way to tell is to try a bit!
Cheap and basic but we love it0 -
Hi
Finally got round to writing up the recipes I want to keep track of from Weezl's threads.
I'm missing a bit though - as in I remember asking on one of our Weezl's threads if anyone has a "recipe" for making Cajun or similar spice (for things like spicy potato wedges, etc) - as its quite expensive to buy one of those Schwartz readymade ones.
Would like to know this too!
Cheaper alternative to the sachets is to find an asian/chinese type foodstore - they do herbs and spices DIRT cheap (ours is 60p-£1 for a massive pack about 4-5x the size of those little jars) - and hopefully if they're like ours they do seasoning mixes cheaply too.
Ours does 'Dunns River' brand generally, which are in a medium size plastic tub (like you get 'basics' type mixed herbs in) for 80p - i find it does 4x or more what a sachet does (generally spicier too, so you use less...). Off the top of my head they do barbeque, cajun, jerk, carribean (nice for wedges too)...0 -

heres the recipe I used...some had a ridiculous quote of eggs but this only uses 3! I also used a large quiche dish but would use a smaller deeper one next time as the lemon was a bit too slim!! very easy to make though although I always find pastry a challenge!!Nerd no 109 Long haulers supporters DFW #1! Fantastic, cheers ISOM.0

Thanks for that lightisfading - duly copied down. Reckon I could use a bit of Marmite instead of veggie worcester sauce - as I always have that in (remnants of 1960s style vegetarian cooking - with its 3 basic flavourings: Marmite, curry powder and tomato puree!).0
