I usually make a cheese sauce and fry up some chopped smoked bacon, fry an onion and mix this all together with some cooked pasta. I then top the pasta mix with grated cheese and sprinkle with some oregano and top off with a couple of sliced tomatoes if I have any. Baked in oven until browned.....yummy!

Cook some pasta, steam some leeks, saute some chopped bacon and courgettes, mix altogether with some creme fraiche. Yum!
I do this with tuna but you could do some chicken instead: get two cans of chopped toms. Whiz in a blender til smooth, add some tom puree, tsp of sugar to take the acidity away, spoon of flour to help thicken, add garlic, basil and seasoning. Mix with cooked chicken and pasta and bake.

  • How do I make a cheese sauce for a pasta bake?
was thinking of cooking some pasta, cheese sauce, chicken, bacon, mix it all together and put in the oven with loads of cheese on top. does this sound ok?
  • 50g butter, 50g plain flour, pint of milk put it all in a saucepan on the heat and whisk all the time until thick. This makes a basic white sauce, then you can add whatever cheese, falvourings you want, for example 75g grated cheddar. I find this all in one methhod easier than the roux method :D BTW this sauce would be enough for 4 - 6 people.

  • If you want a low fat cheese sauce, then whisk 20g plain flour into 275ml cold milk (can used skimmed) and bring it gradually to a simmer whisking. Then you can add whatever flavourings you want, so for cheese sauce add a small amount of low fat mature cheddar and a tsp of good mustard (wholegrain works well).

I use this as the white sauce in my lasagne without adding anything to it, and it's yum.

Boil up some pasta in one pan.
In the other make up a packet of white sauce,(or condensed soup) add tins of Tuna and a tin of sweetcorn.
When both pans are cooked, mix it all together, put it in a dish, grate some cheese on top and grill until brown.
