  • Do you have more carrots and the other ingrediants? Just increase some other quantities?????

I know potatoes help soak up salt when one has oversalted one's soup but have no idea if it would work for ginger

Add some more carrots and stock? You'll end up with more soup but it'll be freezable. I can't really think of anything that would take the ginger flavour out, so I think diluting it is going to be the only option - more carrots is the obvious choice but potatoes etc would work too.

I've just put some more carrots in it - fingers crossed! Am v proud of this recipe - 35p carrots from morrisons, hm chicken stock, home grown onion and ginger from the store cupboard should make 8 portions! Just hope it's edible or will be v cross with myself.
  • if it's not edible then use it as a base to make it again (i.e. use as stock)

It sounds lovely! I really like a lot of ginger in soup, especially if I'm sick, have a cold or feel very chilly. It's so warming and I feel like it helps with nasal congestion. Plus ginger is great for nausea.
Trying to spend less time on MSE so I can get more done ... it's not going great so far! :)
Sorry if I don't reply to posts - I'm having MAJOR trouble keeping up these days!

It actually turned out OK - basic recipe was 1 onion, 2 teaspoons of ginger (but came wooshing out of jar hence post!), about 7 big carrots, stock. Maybe we should start a soup recipe thread?
  • Full recipe please...I adore ginger!

I don't really eat soup but make it for DH. He sometimes complains that it needs more seasoning. This time I added quite a bit of black pepper and it's a tad on the spicy side! Is there anyway to reduce this without a lot of work?!

Sorry, had a blonde moment when typing title - obviously it should be 'soup TOO spicy - can it be saved'. Sorry!

I remember someone saying to add honey but I'm not sure if that was to calm down chilli - what about cream? or make up some veg stock and 'dilute' it?

I would take a little bit out and split it into 'tester pots' see what works or doesnt rather than ruin the whole pan!

    Good Luck
