  • garlic or fresh herbs perhaps. I do find potato and leek soup one that I make with no taste (the last lot I made was like wallpaper paste and even I couldn't eat it)

    Soups are about the only thing I struggle with. You need to really season - over season if anything. I add bits of everything, dash of worcestershire sauce, splash of tabasco, sprinkle of gravy granules, white pepper, black pepper etc etc when they are lacking taste. My mum just seems to be able to throw anything in a pan and make great soup!

    leek and potato is lovely but do use enough salt! what you used sounds like my basic recipe but i dont cook it so long! an hour is more than enough - but i blitz it with hand blender taste - corrrect seasoning - then add a little milk and warm through.

    I too would reckon more seasoning, remember potatoes take up a lot of salt :wink:

    NJW 69 is right - its the seasoning is the key. dont give up - try again. some people prefer to use cream rather than milk, but be careful it doesnt boil.

    I have a fear of over-seasoning, but I have just added more salt n pepper, and some milk so hopefully that will be better

  • I agree with seasoning. I don't over season what I cook but in soups I add loads more salt and pepper than usual.

    Build it up slowly so it is not too strong for your taste and is perfect for you!

    Consistency wise try adding some milk or cream if you have any in - adding small amounts until it is how you like it.

    Leek and potato can be very bland, you could check out Delia Smith's website to compare a recipe and see if there was anything else used to improve it

    I don't cook with much salt but I find white soups and sauces tend to need more salt than I would normally use. Just add a little at a time and keep tasting. :)
