I just bought some condensed milk and have just made this fudge. Am waiting for it to cool and then looking forward to a piece.
How long will it keep if we don't eat it all in one go???

Hi all - I love making fudge as presents, although I only use normal milk, sugar (whatever sugar i have in) and butter - very much cheaper to make than using condensed milk and still really yummy.
Anyway for the first time ever, the milk all seperated in the pan as i was heating it with the butter and sugar. I don't know why as the milk was fresh - made another batch using the same milk and it was fine.
My question is will it be OK to eat? It set fine, but the milk lumps are still in it. It doesn't look very pretty but I could put it in cookies to disguise it LOL. I don't want to poison anyone.

Annie...I'm sure that it is not poisonous...have you tasted it, that would be my starting point, if it tastes ok, use it, if not as presents, in any other way you like.
Have never been very successful with making fudge....could you post the recipe you use, as I swear every time I spoil another batch that I won't buy another tin of milk as long as I live!

Thanks marie - yes it tastes OK - I'll go ahead with the fudge biscuits then LOL!
The recipe i use is dead easy and if it doesn't set then all you have to to is boil it up again and it's fine.
here it is:
ingredients
300ml (1/2 pint) fresh milk
450g (1lb) granulated sugar (I find soft brown sugar gives a nicer colour but that's the only difference)
100g (4oz) butter
2.5ml (1/2tsp) vanilla essence
method
1. Pour milk into a saucepan. Bring slowly to the boil.
2. Add sugar and butter.
3. Heat slowly, stirring all the time, until the sugar dissolves and butter melts
4. Bring to the boil. Cover pan with lid. Boil for 2 minutes.
5. Uncover and continue to boil steadily, stirring occasionally, for a further 10-15 minutes *morelike 20-25 mins* or until a little of the mixture, dropped in a cup of cold water, forms a softball when rolled gently between finger and thumb. Temperature on a sugar thermometer, if used should be 116 C (240 F)
6. Remover from heat. Stir in vanilla. Leave mixture to cool for 5 mins.
7. Beat fudge until it just begins to lose its gloss and is thick and creamy.
8. Transfer to a greased 18cm (7 inch) square tin. *I don't bother greasing - use greaseproof paper instead*
9. Mark into squares when cool. Cut up with a sharp knife when firm and set.
10. Store in an airtight container
variations
I sometimes make diferent flavours.
Baileys - add 2 tbsp of baileys instead of vanilla
Rum and raisin - add 3 tbsp of rum and 2 oz of raisins instead of vanilla
chocolate -add 4 oz of grated chocolate in milk before adding sugar or add melted chocolate instead of vanilla.0 -
bailey's sound delish,my late sis-in-law used to make fudge years ago, and I had forgotten it until now .I really fancy some now. Thanks for the recipe I might make some as a change from easter things.Not long till Lent finishes0

I know this is a very old thread but I just had to share the fantastically easy fudge recipe I've been doing.
Place in a 1.5pint Pyrex bowl: 500g of icing sugar, 2/3 cup cocoa, 1/4cup milk, 2 ts vanilla. Dump 4oz of butter on top.
Microwave on high for 2min.
Beat well with a spoon and pour into a tin to cool it. Tastes best the day after.
I also made a peanut butter version:
500g icing sugar, 1/4cup milk, 2ts water, 2/3cup peanut butter and 1/4cup butter.
Turned out wonderful...to wonderful in fact...considering I do Slimming World!!
Am experimenting to make a vanilla version.
I also wonder if using Strawberry Nesquik instead of cocoa would make strawberry fudge...?"Finish each day And be done with it.
