I have made the nestle's rum and raisin fudge. Its setting (fingers crossed) as I type.

hi guys, would just like to say that fudge is great as a prezzie I made some for mothers day a few years back and neded up making some for my sis as she eat most of my mums.:rotfl:
Anyway thought this recipe may be of use to some of you.It is for microwave fudge. I have just made a batch, tastes delish from tasting the bowl. but will update tomorropew on how it has set.
Microwave fudge
4oz dark chocolate (however,I used milk choc as that was all I had in )
4oz marg/butter
1lb icing sugar
1/4 cup of milk
Put chocolate pieces in a bowl put in microwave for approx 2 mins or until melted.
Add milk, marg and sugar to chocolate, do not stir. Place bowl in microwave, put on high and microwave for 3-4mins. Beat mixture each minute until it becomes thick and glossy. Then pour into greased tin. Chill for approx.2hrs or overnight.

When I made the Baileys fudge, I melted the choclate and condensed cream in the microwave first then when it was melted and mixed, I just added the Baileys last and mixed it in. I then left it in the fridge overnight to set.
It is softer than tradtional boiled method fudge, so I found it better to coated it in chocolate, chocolate powder or icing sugar.
If it is really soft try leaving it a couple of days in the fridge before doing anything else with it.Twins, twice the laughs, twice the fun, twice the mess!:j:j0 -
Hi Guys, made some fudge last night using the recipe on nestle website, bit worried about the cooking, it took some heating up, it did catch on the bottom of the pan a bit, but just stirred it it, tried some this morning, tastes lovely, cant see the caught bits, and doesnt taste burnt, keeping this batch and making some more tonight for teachers presents.

Well not quite hours but a LONG time !
My recipe called for demerara sugar which I have used but its just not dissolving - I have been stirring it for about an hour - it says not to boil it so I am keeping it just below boiling point to try to get it to dissolve but its just not doing it
I have re-checked my quantities and thats all fine so what on earth shall I do ? Shall I whack up the temp anyway and hope for the best or carry on through the night ? :rotfl:
It says to turn up the temp and boil for approx 15 mins once the sugar has dissolved :rolleyes:

Hi Frugal, I have now made 2 lots of fudge from the nestle recipe, it does take ages, i kept stirring, just slightly bubbling around the edges, if you really wack up heat, i found it caught on the edges of the pan, just stirred it in, the fudge doesnt taste burnt, in fact it just tastes gorgeous, making my 3rd lot tonight for teachers/helpers afterschool staff, plus everytime i keep going into kitchen i keep eating a bit, big diet after xmas, keep perserving if you can get the nestle recipe/instructions it might help.

I think my recipe was rubbish - 1 can condensed milk, 500g demerara sugar and 4oz butter. I have turned the fudge out and cut it but its still got sugar bits in it - I know they should have melted but they just haven't !!! I stirred it for 2 hours at almost boiling point and then boiled for 10 mins before beating in the vanilla.
I do quite a lot of baking/cooking etc and 2 hours really ought to have been enough IMO !!!
Have just made rum truffle mix which has to set in the fridge overnight - first tastings are evidence that this is gonna be sooooooooooo much more successful than the fudge :rotfl:

to dissolve the sugar you have to do it slowly on a lowish heat, if you dont no amount of boiling will dissolve it, this goes for jam as well as tablet0
