Freezing Q - cakes and biscuits

Hiya all

Can i freeze homemade cakes and biccies? I usually make my own but only in very small batches (like a dozen at a time) cos only DD eats them and she only has 1/2 a day with milk for her afternoon snack. If i could make up larger batches and freeze them it would be so much easier. I usually just make basic shortbread biscuits from a Mrs Beeton recipe so its just butter, sugar, flour and a little milk.

Also what about cakes? Is there any type that shouldn't be frozen?

I'd like to have my freezer well stocked with meals/snacks etc for DD so that when i am ill it is easier for my mam to look after her and feed her.

  • You should be able to freeze them wih no problems. In the mega index, cooking section there is a website link for advice on freezing foods. You might be able to find some helpful hints there that are specific to cakes etc.

  • I think most cake and biscuit can be frozen successfully - though avoid freezing anything with a buttercream filling or topping as the high fat content would probably make this turn rancid after a few months in the freezer.

    Rock Cakes, victoria sponge, apple pies were all staples in my grans freezer along with scones, crumbles and jam tarts. She would do an evenings baking about 4 times a year and there would always be something to satisfy everyone's sweet tooth. Foil, tupperware, used large margerine containers along with labels were the only hardware. Not sure how long they could last for as with our family everything would be gone fairly quickly.

    Sorry to jump on your thread OP, just wondered how I would go
    about freezing them as itsounds like a BIG time saver.

    Do I need to putlayers of greaseproof between them or anything?

    If you were to choose which is best would you freeze them before cooking or once cooked?

    After cooking is usually better. Jam tarts I do top to top - like clamshells and just stack as many layers as will fit. Cakes generally go in whole just wrapped in film, and biscuits any way they'll go - though greaseproof can save the odd clump depending on what sort of biscuits they are.

    Storing times can be found on the be-ro site under basics and then home freezing.

    Queenie posted a recipe a few days ago somewhere for (I think) Everyday Biscuits (or something similar). I'm sure she said you make up the mix and divide it into 'sausage' shapes before you cook it. The 'sausages' are then frozen and taken out and sliced into biscuits as and when you need them.

    Queenie - sorry if I've got this hopelessly wrong!!! :D

    i have made the everyday biscuits today and they are gorgeous. i cooked some and froze some.

    I made a huge batch of plain fairy cakes last night, for family that were visiting, but I have lots left. I have already eaten 3 whilst sitting here! :shhh: My trousers are tight as it is!!

    Can I freeze them?

    If I can, will they be ok in normal freezer bags?

    Yes, i freeze cakes all the time with no problems. Freezer bags are fine too!!!

    I too freeze them all the time and also freeze them with icing on top and they're fine!:D
