Freezing Q - cakes and biscuits

    I've got some very iffy bananas so was going to make a couple of banana cakes, but we definitely won't get through them in the next couple of days. Can I freeze a banana cake? If so, what's the best way? This may seem like a daft question but for all my freezing of other stuff, I've never had cause to worry about freezing a cake :D

    Yes, you can, or you can freeze the bananas in their skins. When I freeze banana cake, I slice it and put it in a freezer bag so that I can just take one or two slices out whenever I fancy some.

    Thank you for the replies. I think I will try freezing it whole as under normal circumstances (when I defrost) there will be plenty of mouths to feed.

    I freeze whole banana cakes often and it is always fine - don't worry! I just put it in a large freezer bag and pop it in the freezer. They take a little while to defrost but it is no problem.

    I often freeze cakes, even ones I'm going to take out & decorate nearer the time. I just double-wrap them in foil and everything I've frozen so far has been fine on thawing. Also froze some home made scones yesterday as when I'd had two then three, I thought, hmmmm, these are going to be a problem with me around today!

  • with working in a home we always freese cakes i just wrap mine in cling film or you can use foil but dont want fruit cake staight into foil its ment to react to the fruit always wrap in greeceproof paper then foil
  • I've read that alot of people on here freeze cakes but was wondering whether this dries them out or takes away from there flavour?

    The reason I ask is I'm going to be making alot for Shelters Cake Time in a couple of weeks. I was just going to have a mega baking day on the Sunday so they're all fresh for the Monday but obviously if I could bake them in advance then it would be alot less stressful!

    I've never tried freezing them before, the OH seems to think they'd go all dry. What's people experience of this? I'm assuming I'd leave icing them until I took them out the day before.
    Going to get to grips with food shopping again, starting February!

    Yes they do change, and I generally freeze anything I'm going to be icing with sugarpaste/fondant as it is easier to crumb and work with after freezing.

    However, they do not get drier (assuming you wrap them well), just slightly denser. I freely admit to freezing mine with fillings/toppings on occasion. Including:

    victoria sponge with jam & whipped cream filling
    delia's chocolate soured cream cake
    carrot cake with cream cheese frosting and cranberry filling
    coffee cake with buttercream filling

    all of these have frozen successfully and I haven't had any complaints about the results. Cake sales are a great way of raising money. Good luck!

    I have recently frozen bits and pieces of cakes and buns. However I never got to taste any results as my freezer died, and the whole lot had to be binned.:mad: Sorry I can't offer any advice myself.
