Freezing Q - cakes and biscuits

The advice I was given about freezing cakes was to wrap them well before you freeze, and fully defrost them still in their wrapping. this stops them drying out in the open air as they defrost.0

I've successfully frozen Lemon Drizzle Cake (complete with drizzle), Banana and Walnut Loaf, Gingerbread Cake, Rich Fruit Tea Loaf and Fruit Scones.
All, apart from the scones, had been baked in a 2lb loaf tin with a paper liner. Allowed to cool thoroughly, then wrapped in clingfilm and then greaseproof. With them being brick-shaped, they stacked nicely in the freezer. The scones were put into a 'tupperware' container to prevent them from getting bashed about in the freezer.
After defrosting (still in their wrappings), they were offered to guests who were all surprised that they had been frozen/defrosted - couldn't tell the difference :j.0 -

Think I'll make a batch up tomorrow and freeze them as a test to see if I can notice a difference. If not then I'll cook them beforehand and ice them on the Sunday.Going to get to grips with food shopping again, starting February!

i used to work in a bakery and all the large cakes (like angel cake, cherry cake, coffee cake, etc) were frozen and we'd get one or two out in the morning to put on the shelf. they didnt sell quick enough to make them fresh every time...0

There was a chef on the radio a while back who said that he put cakes in the freezer as a matter of course as once defrosted they would be lovely and moist.0

All my baking, bread, cakes and scones goes in the freezer, as just being the two of us we couldn't eat it up quickly enough. Well we could

I've got a big birthday coming up and need to sort out cakes for 3 seperate days. :eek:
I decided I would be best making muffins rather than a big cake but really don't fancy cooking every night so is it possible to make a batch of muffin (or cake of some description) mix and store it ready to bake?
I did think about freezing them but haven't really got the room and I'm a bit unsure if they'll taste as nice?0 -

Hi All,
My son has been given a lovely chocolate/cream birthday cake specially made from a baker it is far too big to use can the cake be frozen as it would be a shame to waste.
