totally! make the most of it, i don't think shops can give you any kind of reimbursment for the difference. although on my tesco reciepts, i had a voucher for some things, and instead of just taking it off the products, it just prints as £2 coupon, £1 coupon etc. so doesnt specify what your actually buying, it just looks at it as payment, so you might be able to just get the rest off your shopping? so if you spend £2 of toothpaste, the £3 over could be used on other shopping? i'm not 100% sure.

dont get disheartened, they are not all going to offer free stuff to everyone who says "nice product" otherwise we'd never have to shop again! hehe
i have probs had 50% success with email/contact letters! sometimes they wont reply to your email, they'll send a letter insteadive had that a few times
