I make yogurt all the time and one of the favourites is made as follows:-

1 pkt of jelly (any make and whatever your fav flavour is) melted in approx 5fluid ounces of boiling water (I do mine in the microwave takes seconds) allow to cool slightly then whisk into the yogurt. This makes a fairly firm set, just add more water if you prefer a runny yogurt.

sounds good... do you add this to the yogurt AFTER it's made or as part of the yogurt making process?

I have used jam in HM yogurt and it was fine ... at least, no one complained!

    I've been Money Tipped!
Jam that hasn't set properly is great for putting with yogurt - makes a kind of fruit corner. I use hm blackberry or raspberry preserve with is very lightyly set (recipe is in the index somewhere).

  • If you strain HM yogurt (a sheet of muslin in a seive) the resulting extra thick yogurt is sweeter.
The whey that drains off is a bit sour, so therefore with the whey gone the natural sweetness of the milk comes through stronger. Also because it's thicker it's easier to mix something with it like soft jam or apple sauce without it going thin and sloppy
  • my homemade lemonade has 2 varying recipes depending on what I have in the fridge

if i have soda water then i mix up some sugar syrup (100g sugar, 100ml water boiled for 2-3 mins) with the soda water and some freshly squeezed lemon juice - mix these to taste - i like mine quite sharp

another recipe for flat (traditional) lemonade is:

    1 cup sugar
1 cup fresh squeezed lemon juice
    7 cups water

    mix well in large jug

    hope this helps

my yogurt didn't turn out very thick :-(

it's about 3/4 of the way there

i mixed some with some mint sauce last night to have over our lamb mousaka and that was nice

might make some lassi with the rest

so, any pointers? i used 2 tablespoons of live yogurt, a few tablespoons of milk powder and uht milk heated to 50C (as per instructions and used the thermometre enclosed with the kit) should i wrap the thermos unit in a towel to keep it warmer? we don't have a proper airing cupboard, if we did i'd use the muslin technique to make some paneer cheese, that's what i did last time i tried to make yogurt and it didn't form properly

i really want to make this work, but like sprouting, i only have limited success

  • Maybe too much dried milk? I don't use any at all because I think that it makes it taste wooly, I always strain my yog so it's really thick a bit like the Greek strained yog. I shouldn't have thought that you'd need any extra heat if it's a thermos. Did you leave it 8 hours ish?

Like the nesquick idea, always seem to have odd packs of this in the cupboard, usually after it's been on special and the children have had a milkshake phase, then the revert to normal and blend bananas and milk together and I get left with loads of milk shake powder.

We use Bon Maman strawberry jam to flavour our yoghurt - would use homemade but it's always run out this far from summer!
