Can I freeze cream?

My MIL froze some last year after going down to cornwall. I had frozen some in the past. Mine seemed ok when defrosted, but a little bit grainy until given a really good stir-so you loose the crust. However hers wasn't great at all, was very grainy and not nice at all. Alright to cook with tho.
May depend on how it was frozen/defrosted. I did mine in portions in pots on a tray so quite open to the cold air and frozen quickly, she froze a whole pot as it was, into a full freezer, so probably slow frozen. She defrosted hers on the side, I did mine in the fridge.
Either way if you want it to have on scones I would prefer fresh, but for cooking frozen is fine.

If I can freeze it, when I come to use it, I presume I defrost it ? guess it would need 8 - 12 hours in the fridge and how quickly would I need to use up ??

You can freeze it; it may need a good stir once it's defrosted though

It should be fine quintwin. Just mix it, either in the FP or with your mixer, with a wee bit of salt in and it will eventually turn into butter. Takes about three minutes for me, in the kenwood. The butter keeps OK - I have had some that was about a week over the cream date before I used it. My milkman delivered 4 litres of double cream instead of 4 litres of skimmed milk! When I queried it he said I could keep it FOC, so I've been busy making icecream and freezing dollops of whipped cream for baking/cooking this weekend. I've still got over a litre left so might try making butter. Thanks! :j0
