  • In my veg box last week, I got the world's biggest swede! Ok, ok, slight overstatement but still ;) I still have most of it left after making root vegetable mash (to use up the mountain of potatoes and massive parsnip I also had in the fridge!).

    But my question is, what can I do with it other than boil and mash it??? Preferably, low GI, low calorie and low fat and if possible, also utilising three weeks worth of carrots which I've not gotten around to eating yet! I'm hopeless!

    PS, I looked through the recipe index and it seems to be lacking in recipes for swede and turnip, or maybe I just didn't look in the right place??
  • Hi I posted this recipe in another thread a while back. You can freeze it too.

    Split pea and swede soup

    a cup or more of split peas (preferably soaked)
    a swede
    1 onion
    garlic to taste
    2 - 3 potatoes
    vegan bouillon (or a stock cube)

    Fry the onion, swede, peas and garlic. Pour on water or any leftover veg. cooking water. Boil then simmer until the peas are nearly soft (up to an hour). Add the potatoes and bouillon. cook until the potatoes arre done then mash with a potato masher.
    This tastes better than I expected and I can eat whole vats of it.

    If I get any left over veg I just chop it up and freeze till needed or with swede I like to make a mixture up of swede, carrot and parsnip and just add it to mince for pies etc, makes the meat go alot further.

    Hi wigglywoozle,

    I love swede added to casseroles and stews...it really does give them extra flavour. It seems to keep forever in the fridge so I don't think you'll need to use it urgently.

  • I used to have a recipe book which had 'Redeemed Swede' for people who normally hate it - basically just make sure it's well boiled then puree it with cream :rolleyes: I do that if I'm serving it up to swede-haters and it's gorgeous, but not exactly healthy enough for every day! I normally boil it with carrots and mash the two together - yum.

    Eat it raw in a salad or as a nibble as you would carrot. i only like swede carrot and parsnip raw - I prefere most my veg raw and actually eat very little cooked - even eat the pea pod after a wash .Don't eat beans raw though you'll be very ill.

  • I love turnip (the round one thats a bit purple and green) cubed, boiled, coated with a tiny bit of butter, a shake of pepper and served with white sauce, ham and potatos. DE-licious!
  • It is lovely if you add a little nutmeg to it or you could add curry paste if you like it.
    My OH's favourit though is to use it on top of a cottage pie instead of potatoes on the plus side it is a lot lower in calories
