Just found this thread and I've just been given a fresh trout nicely gutted. Anyone got any other ideas other than those mentioned ? Including what I can have the trout with or is it best just on it's own ?

A friend of mine is on the way to my home with a fresh trout he has just caught while fishing, he has already gutted it etc. Now I cant eat it tonight and I have already made a dinner for tomorrow, I wont be home on Saturday, so any suggestions on how to store it, and also a nice recipe would be good. My favourite way to have trout is simply grilled, maybe with some new potatoes and asparagus or broccoli.

Trout will freeze fine - you could cook it - maybe poach it? first, in portions, and it will be really quick for a meal. I like my fish really fresh and so I would want to freeze it, but it probably would keep in the fridge till sunday, but it really would be better frozen.0

Sounds grand, just fish and chips really.
Trying to reduce the food bill I was looking for food to cook from the freezer/store cupboard.
I remembered we had a load of trout (my father in law is a keen fisherman and so we get it for free - result).
Anyway I thought I'd post the recipe here for you all, my OH is currently on the Weight Watchers diet so I've added the points total at the end.
Note this was for 2 (me and my OH), I could probably split this into 4 and freeze the rest. We tend to eat large meals which is why our food bill is too high. I guess that comes from being married to a butchers daugher where the meat is shovelled at you. I'm not complaining but you get used to eating more.
Anyway enough waffling, here is the recipe.
2 medium Trout fillets
2 medium slices white bread (stale if poss)
2 medium potatoes
1 egg
1 Tsp Rosemary
1 Tsp Thyme
Wash and cut the potatoes into wedges.
Place in a pan of salted water and boil for 3-5 mins
Pre heat the oven to 200C, with baking tray inside
When potaotes are par boiled drain and place on heated baking tray skin side down.
Spray with fat free cooking spray (weight watchers type), sprinke salt, black pepper and mixed herbs over the wedges.
Place potatoes into oven for 15 mins
Using food processor or stick blender, wizz the bread into
breadcrumbs. Add Rosemary, thyme, season with salt and black pepper.
Mix breadcrumbs and herbs/seasoning together.
Remove skin from trout and any large bones. Cut into goujons.
Coat goujons in flour then dip into beaten egg. Roll the goujons in the
breadcrumb mix pressing down to ensure even coating.
Reduce oven to 180C and place fish into oven for approx 20-30 mins.
N.B The wedges are probably not done yet so leave them in, keep checking and remove when ready.
Serve with salad.
As a weight watchers meal the points count breaks down as follows.
Potatoes 400g = 4 points
Bread 100g = 3
Egg (not all used) = 1
Fish 200g = 4
Total ---
12
Split over 2 portions 6 points per portion
I guess you could substitute cod or haddock (even salmon if it's on RTC!).

Rikki, neither had I until now.
My OH goes to college one night a week, so I get to cook for (or should that be torture) her. She thought they were delish !
It's the only real time I get to cook so I like to try different things.
I also do a fish tikka using trout on the barbeque. I'll dig out the recipe if you want.
