How do you cook trout ?

    Looby I usually do what you thought, but I put slices of lemon in the cavity and some salt/pepper. How long depends on how big really, a small trout about half an hour, I think.

    I would bash up some garlic, ginger, chilli and a good handful of fresh herbs. Mix in a glug of olive oil and then smear the mixture both in the cavity and outside the fish. Wrap in foil and cook for 20 to 25 mins in a hot oven. Serve with crusty bread and salad.

    You could just grill it as it is and it will be very tasty.

    Thanks everyone.

    I had some fresh dill, a lemon and various other herbs in the house so I used them and then wrapped the trout in foil and baked it in the oven.

    I've just finished eating dinner and it was absoultely delicious. Even better I got my 2 daughters to eat some as well.

    I want some more now. I'll have to speak ever so nicely to my Dad's mate as he caught it:D

    I would definitely leave it whole as the flavour is better that way. Simple is the way to go - put rosemary in the cavity and bake ;)

    My personal favourite way to do trout is to smoke it - dead easy if you have a barbecue with a lid, just throw a handful of maple chips soaked in water and a big bunch of herbs on to the hot coals and close the lid. Stick the fish on a piece of foil and into the smoke for about 30 minutes. Serve with some salad (brie and strawberry goes particularly well) and maybe some home-made mayonnaise?

    Obviously a bit of a seasonal one given the barbecue bit but a really good recipe.

    Hiya,

    I bought a big pack of trout fillets and froze them couple of weeks ago as they were smartprice and reduced and cost mere pennies for 6 fillets :money:

    Now usually i do them (and my salmon) the same way.. placed on lighlty buttered kitchen foil, sprinkled with dried dill wrapped into parcels and placed in the oven to bake, quick squirt of lemon when they come out and voila!

    Problem is im a little bored of that now... And im looking for other ways to cook trout fillets! (and if it works with salmon too great as i have some bargain salmon fillets too ;) )

    So ideas please.. dont mind buying a few new ingredients so throw any ideas you have this way! :D

    If you like spicy, you can cover them thickly with scwartz cajun spice and then shallow fry ( I personally use butter) til it's all blackened serve with salad and rice, very tasty.

    Trout can be lightly grilled and then drizzled with melted butter and sprinkled with a few chopped almonds or just squirted with lemon juice. New potatoes would probably be nice with it.
