It will be fine in the fridge, I find mine usually is really nice and airy when it has been refrigerated before cooking. Cheese strings to make a stuffed crust? I had never thought of that! There must be a way to do it with normal cheese, I'm sure. the kids would love the cheese strings, but the adults wouldn't.
