I use my slow cooker a lot, but haven't been using it for potatoes,as I found that when I put them in with casseroles they tasted ok if a bit soggy but looked really discoloured. My recipe book suggests using them for baked potatoes by wrapping them individually in foil, and I wondered whether I could do this and put them on top of the casserole to cook.

    Has anyone any tips?

I was sitting next to a guy on a plane, and he told me about this.

Firstly, do not fill the slow cooker with liquid, leave it empty - apart from the potatoes.

Take each potato. Pr!ck it liberally. Rub it with olive oil, or any other cooking oil you may have. Season, if you so desire. Wrap each potato completely in tin foil. Place each potato on the bottom of the slow cooker. Put the lid on. Turn the thing on, and it is all over bar the waiting.

The person who told me about this puts his cooker on low. I put mine on high. As each slow cooker varies, you will need to experiment. Leave the potatoes in the slow cooker for 8 to 10 hours. Do not turn the thing off at any stage, or take the lid off, because the potatoes need to be piping hot. I have been told that the flesh of the potato is darker than if you had baked it in the oven or in the microwave, but I have not found this at all so far.

You can turn the slow cooker on early in the morning, and the potatoes are ready when you get home from work in the evening. Or you can turn the thing on at 9 in the evening, and breakfast is ready at 7 in the morning.

And, yes, I have tried it; it really works.`
  • Yep it does work. I have baked them a few times in the slow cooker and it's great.

Haven't done them in a while but you have put me in the mood for them :) especially with how cold and miserable it is where I am :(.
