Help! I'm about to start making banana muffins (recipe from Munchki in post 2709), but am confused before I start....
The recipe says 280g flour, but I'm not sure if this should be plain or self-raisingThe recipe also has 1tspn each bicarb and baking powder, which is the only reason I'm wondering......
Hiya CW, just use any ole plain flour

Awwww! not enough sugar!
I've got 300g of sugar. The original recipe calls for 200g. If I made a double batch and added sultanas for extra sweetness, do people think that might work?
Also, hello to new people and ex-lurkers, lovely to see you
Love Weezl x
Weezl - i also didn't have enough sugar. I doubled the recipe up and needed 400g, but could only spare 200g, so added 200g raisins instead.
Just had a small bit and yummmmmmmy0 -
I think (please someone correct me if I'm wrong !) but if you're using baking powder then it should be plain flour? I think the baking flour and plain flour work the same as self raising. That's the way i've always thought it anywayHiya CW, just use any ole plain flour
hthOff for a play now, 'cos I got a kilo of "only fit for mashing" bananas for 10p in Whoopsie this morning :j

I've had a busy afternoon....
loaf of bread is on the go in my machine. I enjoyed the 'no knead' bread, but the blokes wouldn't eat itSo I think the machine is the way forward here as I know they both eat that
(son has seen it on the go, and is already on count-down for it coming out)
first bag of apples is all stewed. waiting for them to cool so I can bag/box them up -- but think I'm going to struggle for freezer space for this panful, never mind the second bag I still have to do.
banana muffins made. have discovered three problems with them!!
1. you shouldn't try eating them as soon as they come out of the oven!
2. you shouldn't make them when you're stuck in the kitchen with other work. 18 muffins soon become 15
3. you shouldn't let other members of the family see them. son saw them in the kitchen and asked if they were for eating. when I said yes he went to take the whole cooling tray (containing 15) away with him -- and sulked when I told him "just 1". verdict was he couldn't really tell they were banana, but he likes them..... which means I have competition for them. have enough bananas for a second batch, but think I'm going to bob down the shop just in case they still have one of the other Whoopsied bags left (though it's unlikely).Cheryl0 -
CW, I always use extra banana in mine and they always turn out well. I also add cinnamon to my batter before baking as hubby loves them also choc chips are nice added to the batter or coconut if you have it and walnuts are the best!
hmmmm me thinks I am going to have to make some now. Will look in the freezer to see if I still have any mashed banana in thereI am somebody. I am me. I like being me. And I need nobody to make me somebody! Louis L'Amour0
