I looked at the sites and they looked really interesting - and I have a spare fridge (well, the beer might have to be evicted), so I am thinking of trying this. However, on the instructions I looked at the baking itself looked really complicated, what with the shaping, trays of water and so forth. Is it possible just to bake the dough in a loaf tin like I would normally bake a loaf of bread? Cos I'm not sure how timesaving this would be if it involves a lot of faffing at the baking stage.

Honestly, it isn't faffy - it's just that the authors have given very detailed details.
I tried the loaftin method too at first. It made bread but very mediocre bread. You need the steam from the pan of water really to make something nice.

Justamum - that's a fantastic price - I'll be getting my flour from Mr T's from now on! I thought the Co-op was cheap!

I think the Co-op is horrendously expensive and avoid like the plague! Tesco do sell their own bread flour in a pink bag for about 50p, but I have found it makes a weak loaf.

Can anyone tell me exactly what 'all purpose' flour is, please? I have stocks of bread flour as well as plain and self-raising flour; hopefully, it's one of these!

    I think it's plain.

Mum2many, you will know if the yeast is ok, if it starts to rise....mine was almost bubbling
Confession time, I forgot to put the dish of water in the oven
    I also used bread flour.

But, it does slice quite thin and it tastes ok.
    I will persevere.

I think the water helps the texture/crust.
Mine is edible without the water. :D
