Hi fertyskids,
not really sure about freezing the sauce as ours never lasts that long - I would think that in this recipe they might go a bit watery. If you do have any leftovers it reheats well.
What I do freeze with courgettes is soup as the kids like it - just a basic soup with onions, courgettes and potatoes chopped up and cooked in a bit of vegetable oil until they soften a bit and then I add some vegetable stock and simmer until the potato is cooked then blend it (OH prefers soup without lumps!) but you could leave it unblended - freezes really well.
Again don't think this would freeze - but have also used this recipe and it was tasty.http://www.bbcgoodfood.com/recipes/3624/courgettes-with-sundried-tomato-pangritata.
and finally - sorry to keep waffling on - there is another recipe on the good food website which I have printed off to make - but not yet tried which may be worth a try http://www.bbcgoodfood.com/recipes/3623/courgette-fritters-with-tomato-and-feta-salsa.

Evening everyone, updated my signature my shop was more than last weeks so will have to spend £90 or less. Going to try harder this week to get it under, i've not been too well last week.So hoping everything will be ok this week and i can get the shopping bill down lol.

I keep telling myself that not many girls on the wrong side of 50 get the chance at a new career like this so I intend to grab it with both hands:rotfl:
I may treat myself to coffee on the way to the bus though as DD2 has been working in the coffee shop at the station for the last 2 weeks so I'll have to support her:D well now and again anyway.

I've just started a new career and am now running my own business, having given up my old J.O.B at the end of last month, and not being a young chicken myself (45 now) I know how scary it is, but at the same time exciting, exhilarating and, well, scary IYKWIM. But remember, you are at an age where you know an awful lot now, and they obviously saw that in you, so you must be right for the job, so go girl, you can do it...:dance:
