Hope you guys have your meal plans ready?

Here is ours:

Friday-Sausage Casserole & Baked Spud
Saturday-Fish & Chips
Sunday-Being taken out for dinner
Monday-Lamb Stew & Mash
Tuesday-HM Fish-pie & Veg
Wednesday-Shepherds Pie & Veg
Thursday-Chops, Roasties & Veg

    I think I have a meal plan :j.

    Friday: spicy chicken and cous cous
    Saturday: Spaghetti Bolognaise
    Sunday: Cornbeef hash
    Monday: Jacket potatoes with tuna, mayo and sweetcorn
    Tuesday: Yoghurt-topped pasta bake (modified to make it lower fat)
    Wednesday: Sausage casserole
    Thursday: is my "sinners" day and we have Chinese takeout

    (All of this subject to change, but coming out of our freezer / larder as don't want to have to do a shop this week, apart from some veg from the market)

    Tuesday:
    Greek baked giant beans (slow cooker)
    Greek potatoes
    Greek salad

    Wednesday:
    Aubergine & veggie mince enchiladas
    Spinach salad

    Thursday:
    Split pea soup (slow cooker)
    Garlic toast

    Pandora123 i would love some of your vegan recipes particularly the enchiladas i was veggie for 12 years and now have become intollerant to lactose, something to do with my colon apparently (lovely!) an am always on the lookout for cheesy dishes made vegan!
    Our menu consists of
    Friday
    Wheat noodles with vegetables and soy sauce
    Sweet chilli 3 bean salad

    Saturday
    Jacket potatoes with tuna and sweetcorn (for my bloke i let him eat meat occasionally!) vege chilli for me
    Salad

    Sunday
    Fish and chips (again for blokey)
    Bulgar wheat casserole for me

    Monday
    Pasta Bolognase (can't spell and forgot to buy spaghetti)
    Homemade garlic bread using soya spread

    Tuesday
    Omelette for blokey
    Freezer tea for me (i'm sure there's a lentil bake in there somewhere)

    Wednesday
    Pasta bake

    Thursday
    Shepherds pie
    Veggies
  • Hi ecoelle,

    I find mozzarella Cheezly melts very well provided it's covered in the oven, and that's what I use on top of the enchiladas.

    I'll post the enchilada recipe after I make it as I usually just "wing it" with enchiladas and don't have a recipe written down for it.

    It's amazing all the "cheesy" things you can do with Cheezly and Sheese, like macaroni cheese, lasagne, cauliflower cheese, cheese on toast, etc. No need to give up creamy, cheesy things if you don't eat dairy!

    Toad in the hole, Vegetables (Probably carrots and sweetcorn)

    Wednesday
    Cheese and potato pie

    Thursday
    HM chicken pie with roast potatos

    Lunches will be..
    Chicken mayo sandwiches
    Soup
    Beans on toast
    Scrambled egg on toast
    Cheese and onion toasties
    Left over pasta bake
    Tuna sandwiches

    thursday - tuna flat wraps

    friday - home made chilli and rice

    saturday - home made lasagne

    sunday - roast dinner

    monday - chicken curry ( using left over chicken)

    tuesday - home made spaghetti boll

    wednesday - left over chilli or lasagne

    lunches will be

    sandwiches
    home made soup
    scrambled egg on toast
    beans on toast

    This week's plan is:

    Fri - Beef Casserole (slow cooker)
    Sat - Lasagna
    Sun - Fish pie
    Mon - Chicken curry (slow cooker)
    Tue - Omelette
    Wed - Chilli (HM from freezer)
    Thur - Pork joint (slow cooker)

    All HM and all with loads of veg. :D

    Think I only to buy need milk, eggs and some lunch bits this week

    Tonight - HM Chicken Chilli Kievs with mash and veggies
    Saturday - Quorn lasagne - maybe!
    Sunday - OH wants a roast :rolleyes:
    Monday - Pasta and Seafood
    Tuesday - Bacon, Egg, Beans and Chips
    Wednesday - Sausage Casserole
    Thursday - HM Fishcakes
    Friday - Shepherds Pie
