Mozzarella - 2 pks should have been used by yesterday - Help !

Can anyone come to the rescue please ?

I have 2 packets of mozzarella (the type in water) which should have been used yesterday - I am sure it will still be ok (I often use stuff over its dates) but seem to be at a loss what to do with it.

Normally I would do it with basil (grow my own) and tomatoes but am a bit bored with that.

I am a pretty good cook (blow my own trumpet :D ) - just short on ideas today :confused:

I have fairly well stocked cupboards as I am still new to this and have been overbuying for years *oops*

    Hi
    you may slice the mozzarella over a piece of toast and grill until the cheese melts. You can add some herbs like oregano or anchovy paste if you like the taste.
    Or you can eat it cubed with pasta or in any salad.

    Thanks but sadly have no salad til shopping day and not enough bread for us all (there are 4 of us for dinner, babies will eat something NOT out of date :rotfl: )

    Any other ideas :confused:

    Hello Frugal,

    I would suggest that you freeze one of your mozzarellas as then you can use it later .... I always freeze mine and get one out about 2 hours before making a pizza and then it is so much easier to grate as it is still stlightly frozen!

    With the other I would make something like " mozzarealla in Carrozza" (cheese in a carriage) - which is a wonderful fried sandwich - if you look on the internet there are loads of recipes for this or have a look at this one http://www.marieclaire.co.uk/travelfood/recipes/Mozzarella_in_carozza_article_83997.html

    Slice finely, layer wiht layers of cooked veg and potatoes (and bits of ham or bacon if you eat meat), cover with some stock and bake in the oven - Yummy!

    Or make suppli` (arancini): rice balls with chunks of mozzarella inside, then deep fried. See recipe (which you can greatly simplify!):

    I will definately freeze one - I didn't know you could freeze mozzarella !!

    Have had arancini in a restaurant - Italian food is my absolute fav in the whole wide world :j :j :j :j :j

    Split a piece of chicken add a load of mozzerella then wrap in bacon and cook with some BBQ sauce - delicious

    I'd taste a little bit before you cook a full meal before. I've gone to cook with mozzarella that has been a little bit out of date before and found that its gone sour.

    half cook some bacon place the mozzerella on top of the bacon and roll up finnish of in hot oven serve eith a tomto sauce and some fresh bread and enjoy

    Why not make meatballs with it? Mix minced beef, salt, pepper, an egg, and some chilli (if you like). Place a big spoon ful of this into your hand, place a chunk of mozzarella in the middle and mould the beef mix round the cheese. Then fry these for a couple of minutes to seal them.
    Put them into an oven proof dish on gas mark 6, with a pasta sauce over the top-a couple of tins of tomatoes with some basil in them will do fine. Slice any left over cheese and place on top-bake for about 40 minutes and serve with pasta. Delicious, one of my favourite meals.
