recipe for a christmas type desert wanted

Hi everyone. Please can you help I am in need of some inspiration for creating a dessert for christmas day tea. I have done my limited range of favourite desserts to death, so any help would be grately appreciated.

    Although it's not pie-filling, Lidl do great bottled cherries!

    What about a cheesecake with a mulled wine sauce made by mixing arrowroot or cornflour with a mix of mulled wine and lemonade or water.

    if you don't want to be bothered making ice cream from scratch, you can let some luxury vanilla thaw slightly and mix in crumbled christmas pudding or a couple of tablespoons of tinned chestnut puree.
  • How about a cheesecake?

    I have a basic recipe here with variations, the most suitable for Christmas is either the Christmas Pudding cheesecake or the Baileys cheesecake, both can be made ahead and frozen

    Pavlovas are quite simple to make, but look fantastic.

    Whisk 4 eggs whites with a pinch of salt.
    Gradually add 8oz sugar while you are whisking. Whisk it until it's really stiff.
    Whisk in 1 tsp cornflour, 1tsp vanilla essence, and 1tsp vinegar.

    Place the mixture on to a baking tray with a sheet of greaseproof paper. Spread the meringue about 1-2cm thick in a circle for the base, then pile it round the edges to make the sides.

    Put in the oven at 140°C and bake for about an hour. It's cooked when it's a pale biscuit colour and feels hard to touch.

    When it's cool, whip some cream and add cocoa powder and alcohol of your choice to taste. Fill the middle with the chocolate cream and decorate with fruit of your choice.

    The secret is as much whisking as possible at the egg/sugar stages. You need the mixture to be as stiff as you can get it. It's easier with an electric whisk!

    I do a rich chocolate mousse on Tia Maria and coffee soaked sponges, with fresh whipped cream and sliced strawberries on top.

    I am doing a Christmas variation of an Eton Mess, broken meringue bits, whipped cream and instead of strawberries I am adding bottled cherries & apricots & using the liquid as a sauce:D Couldn't be easier....or more fattening....or more yummy:rotfl:
    Less old style but equally yummy (and we all deserve a day off on Boxing day) are Tescos finest chocolate tarts, utterly to die for if you are a choc-o-holic:o

    In England we have Mothering Sunday & Father Christmas, Mothers day & Santa Clause are American merchandising tricks:mad: Demonstrate pride in your heirtage by getting it right please people!
  • Christmas pudding fritters?

    Small balls of christmas pud, dipped in a cider batter and deep fried. Basic batter is made with flour and water but use cider instead of water, mix should be the consistency of softly whipped cream.

    Serve with cream or ice cream for a tasty treat

    This came from readicut people I am on there mailing list. Could be used for lunch time or tea time.

    Ice Christmas pudding

    ¼ pint milk
    4oz marshmallows
    1 teaspoon cocoa
    1 teaspoon instant coffee
    2 oz raisins
    1 oz currants
    2 tablespoons sherry
    2 oz diced cherries
    2 oz chopped nuts
    ½ pint thick cream - whipped

    Put:-

    The milk, marshmallows, coffee and cocoa in a pan, heat gently until the marshmallows are melted.

    Allow to cool.

    Mix the dried fruit with the sherry, allow to stand for 30 minutes, then add to the marshmallow mixture with the cherries and nuts.

    Freeze for a short time until slightly thickened, fold in the whipped cream, put into a basin and freeze.

    Not made it but enjoy.
