My OH has decided he likes this after all when he was inadvertently served it in a baked spud at work.
Personally I dont like it - but I would like to make it for him.
Has anyone got a recipe that will not be too spicy?

I usually mix up mayo, curry powder and a dollop of mango chutney, and mix cold chopped chicken into it - that way you can vary how spicy or strong it is.

mayo, curry powder and a few chopped apricots ( I use half a small packet of the ready to eat type ), and few chopped almonds. Would depend on quantity being made. Then add cooked chicken ...voila!0

Thansk for the replies. Just two more quick questions -
1. Will a few dried apricots be any good or must they be fresh? (I was thinking of cheating and picking out the dried apricots from the dried fruit ''n' nut mix I usually buy).
2. Can this be made ahead of time and frozen?

Mayo does not freeze well. Best to make it fresh. you could use dried apricots, though you may want to soak them in water or orange juice for a bit first to soften them up
you may be able to just soak them in the mayo, anything to soften them a bitfounder of Frugal Genius UK (Yahoo Groups)0 -
I add a little pineapple puree and a few small chopped up bits of pineapple and a couple f raisins in with curry powder, mayo salt and a tiny bit of sugar. its yum-cious. my customers used to love it.0

Silly question but I am new to this cooking from scratch can anu=y one tell my how to make HM coronation chicken? Trying to think of different sandwich fillings.0

I make mine buy using left over roast chicken chopped into chunks. Couple of tablespoons of low fat mayo, some chopped spring onion and a teaspoon of curry powder (this is to taste really).
Not sure if its the proper way but gets a thumbs up from us. Even nice with out the spring onions if you dont like them.0 -
