Coronation chicken - how to make it?

A friend of mine gave me this recipe many years ago - it's similar to Coronation Chicken (I call it Laureldean Chicken after the place where she lived) and very easy to do ~
1 cold cooked chicken - stripped
1 large onion - diced
1 tsp tomato puree
3 tsp Branston pickle
½ pint chicken stock
3 tsp curry powder
1 pint mayonnaise
Fry onion for 1 minute
Add curry powder and fry for a further 5 minutes
Add stock, pickle and tomato puree and cook for a further 20 minutes on a low heat
Allow to cool, then beat in the mayonnaise
Finally, add the chicken meat and put in the fridge to chill.

Hmm, could I open a jar of Homepride curry sauce and mix in the chicken? Why do they stick dead bugs in it, nobody's seem to like this addition.0

I make up a large quantity of the tomato/mango sauce, then freeze in smaller portions.
When I want Coronation Chicken, I defrost then add mayonnaise, chicken and whatever else like cashews and raisins.0 -

Chicken Breast
How do I turn it into coronation chicken?

I mix some mayo with a bit of milk to thin it down to a pouring consistency. Add curry powder to taste. Throw in some raisins (or dried apricots if I have any), a blob of mango chutney. Add chopped chicken and leave it for a while to let the flavours settle.

Shouldn't 'clump' if you mix it well with mayo before adding anything else....haven't made this for a long time, thanks for reminding me

Hi Mellika,
If you stir the curry powder through the mayonaise with a fork it shouldn't clump. There's an earlier thread with lots of tips on making coronation chicken that should help so I've added your thread to it to keep the recipes together.
