Mine is dead simple!!
Mix up a small amount of curry paste (we use a tiny amount of vindaloo) and mix with mayo, then add cooked chicken. Serve in a baguette with lettuce and onion...well thats how we like it.
I used to pay £3.90 for exactly the same above from the deli, but one day the owner wasnt there and OH asked the girl serving how it was made and that was the above recipe. £3.90!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!....it was lovely though and a good way to use up left over chicken.

Hello, I would like a coronation chicken recipe for use as sandwich fillers please. We are absolutely addicted to the coronation chicken sandwich fillers at our local Asda, but it must be cheaper to make it ourselves.
I have a rough idea what goes in it, but personally I like to follow a recipe.

I make it like this:-
Poach chicken add to the pan some raw carot and celery for flavour, leave to cool in the pot, it stays nice and most.
My sauce is made to my taste by me, so no exact quantities.
I use Pataks curry paste, take a quantity and lightly warm it in a frying pan with finely chopped onion (make sure onion is cooked although I dont always do this), to take the harshness out of the paste, then add it to some mayo (full fat)/creme fraiche/greek yoghurt, a combination of all three. Squirt of lemon juice, then seive apricot jam into the sauce.
Shred the chicken and add sauce, refrigerate and serve the following day, as it always takes better. If I am serving this for an impressive lunch, I layer a platter with colourful salad leaves, including watercress, add shredded chicken to the leaves. I then frilly up some spring onions and lay them on the top0 -
My daughter, who is at Uni, wants a recipe for Coronation Chicken. However, she does not like sultanas so it would just be a case of omitting those. Thanks in advanceJasmine0

I dont like sultanas in my Coronation chicken either - nor flaked almonds that some people put in.
I do not have an exact recipe I am afraid - just mix some cooked chicken, curry powder, mango chutney (can use apricot jam) & mayo together & thats it. I think its one of those extremely flexible recipes.0 -

Ooh, thanks! :T I love Coronation chicken but only buy it ready made as a sandwich filler if it's been yellow-stickered in Mr T's. I will now have to have a go at making some.
Edited to ask: Any idea how long a batch would keep for in the fridge?0 -
