Well done from me, too :T I'll add this to the current meal planning thread, to keep everyone's plans together.

Boil equal quantities of potato and sweet potato.
Drain well and then return to the pan on the hob, to allow any excess water to steam off.
Add butter and mash the potatoes; you need to make a dry, fluffy mash.
Cook some salmon (or use tinned) and flake, checking carefully for bones.
Mix together the salmon, mash and some parsley, then spread the mixture on a plate and chill it in the fridge for an hour.
Once chilled, divide the mixture on the plate into 8 and then, using floured hands, form into cakes.
[optional - Coat the floured fishcakes in beaten egg and then in breadcrumbs]
Heat some oil in a pan, and fry the fishcakes for about 4-5 minutes on each side, until golden.
or cook in the oven for about 20 minutes or until lightly golden, turning halfway through the cooking time.
I only used normal potatoes as MrS was out of stock of sweet potatoes  I cooked the fishcakes in the oven and served with a nice green salad and some baked beans. DS loved them!(I might shape them into little fish for him next time

Nikki x. Sounds yummy, DS likes haddock/cod so might try this with him. I will also have to see if I have a fish shaped cutter (could use as mould) in that huge tub of shaped cutters I mentioned a while back
, although I am sure you could easily shape them without!
