Add the peas 5 mins before serving.
Serve with a green salad and crusty bread.
This is the most forgiving dish - it's almost impossible to ruin.

Could anyone give me any one pot recepies for dinners/lunches please? I want to be both money and time saving when cooking.

chicken breast, chopped into small chunks
onion, finely chopped
red pepper, seeded and chopped
2 garlic cloves, finely chopped (optional)
long grain rice (between 75-100g rice per person, depending on appetite)
tomato puree
1tsp dried thyme, oregano & chilli powder/flakes
chorizo sausage, cut into chunks (optional)
tin chopped tomatoes
chicken stock (twice the volume of the rice)
frozen peas +/ sweetcorn (optional)
In a large pan, cook the chicken until lightly browned.
Add the onion and peppers and cook until soft.
Add the garlic and rice and cook for 5mins stirring constantly.
Add the tomato puree, thyme, oregano, chilli, chorizo, and chopped tomatoes. Cook for 2 mins.
Add the hot stock and peas / sweetcorn, bring to the boil, then cover and simmer over a low heat for 20 mins, or until the rice is cooked.

i did a basic chicken one a while ago when i ran out of ideas for tea with chicken thighs
chicken thighs deboned
one onion
3 carrots
frozen peas
new potatoes
chicken stock
blob of butter
put the butter in the pan
add the onion until soft
add the chicken thighs to sear them
remove chicken thighs adn set aside in anotehr dish
to the main pot add
the new potatoes in uncooked
then add the carrot
then place the thighs on top of that mixture
add enough chicken stock to cover nad bring to the boil
turn down heat and let it simmer for about 40 minutes
add a handful or two of frozen peas
leave to simmer for another 5 minutes
serve up either into a bowl or on a plate
nice fillign meal in one pot and once youve eaten the thighs you can eat the rest as soup with homemade/discount rolls and its lovely (although havent tried blending it to a smooth soup yet)Time to find me again0 -

There seem to be a lot of recipes stating chicken thighs as the main meat ingredient. Can I suggest that people only buy whole chicken (free range if possible as it will contain a higher meat content than standard chickens which contain a lot of fat & water which leaves the meat when you cook it) and then butcher them it themselves as a much cheaper way of buying it.
I find that a whole chicken (£8 - £9) will feed 9 of us (2 adults & 7 kids - we foster) for three meals - boned thighs for curry, pie etc, Breast in gujons for fajhitas or wrapped in bacon and grilled and the bones skin etc made into a stock for soup etc...
That's only 34p of "meat" per person per meal and a lot cheaper than buying chicken in kit form. It also makes full use of the animal - quantities can be bulked out with vegetables which are good for you AND cheaper without sacrificing taste.0 -
I just had to tell someone about my one pot basic meal tonight which has made more than 3 meals.
I took odds and sods veg from fridge that needed using up - onion, leek, half a tin of sweet corn, carrots, mushrooms, potatoes and some frozen peas and cooked them in a large pan with oil and butter until cooked. Then I added a heaped tablespoon of flour and stirred into the veg to coat it all and then added milk to make veg in white sauce - all ingredients left overs and the looking a bit sads that I would have tossed out so cost neg.
Once the the white sauce was cooked I divided it up
1. One portion I have added grated cheese to and will use it to top baked potatoes (I baked a large bag of potatoes today as I had the oven on to roast a chicken)
2. Another portion I put in an oven dish with some of the roast chicken that I cooked today and will top it with either mash or pastry for a dinner for OH tomorrow
3. Another portion I thickened with bread crumbs to make little vegetable balls that I will cook in the oven for a veggie dinner - like mini burgers (I freeze all crusts off loaves and make crumbs with them)
4. Finally I made hot stock with marigold powder and stirred it into the veg in sauce to make a vegetable chowder. Some is in the fridge and some is in the freezer.
I am so thrilled that I didnt waste any veg and that I have made not just left overs but tasty filling meals.0 -
