Recipes for smoked salmon

I cleaned out my fridge freezer on Saturday and found two packs of smoked salmon that I'd bought on bogof in Somerfield. Wanting to use up what's already in the freezer this week, anyone got any recipes for using it in a main course or can you point me in the direction of a recipes thread? Thanks.

Marinade the salmon in lemon juice for a couple of hours, then cut ito strips with scissors and toss through a large green salad....... rocket goes well with smoked salmon, use it in a quiche....... on its own with brown bread and butter

I dont like salmon but for OH i have two recipes.....
Marinade the salmon with oil, lemon, and dill then drain thoroughly. Mix up a homemade hollandaise or mayonaisse and add more dill. Griddle the salmon very quickly, basically just long enough to get the seared marks. Prepare asparagus or brocoli to your prefference (steamed or grilled in or house) and lay on a plate, put pieces of salmon on top and cover with the sauce.
Make a white sauce and then add parmesan (d'oh cheese sauce) and add herbs to your choice. Boil pasta of your choice and drain. Combine pasta and sauce in one large pan and keep on a VERY low heat. Slice the salmon VERY finely and add to the pasta and sauce, toss about and give it about 5-10 mins gentle heat but make sure it doesnt stick. Serve with crusty bread.0 -
I would use about half the packet in a quiche I think, enough to just cover the bottom, broccoli is good with salmon, just steam small florets lightly and drain, put in the quiche case with the salmon, pepper, and a little salt, two eggs made up to half a pint with a milk and single cream mixture wisk and pour over the salmon, bake at 160oC until the custard is set. leave to cool...... if serving with salad, or cook new spuds and another veg and serve hot.

very quick smoked salmon pasta - cook pasta, drain, toss pasta with a couple tbspns creme fraich (half fat works best) and the salmon cut in strips. Serve with salad and lemon juice. Yum
Alternatively, eat with HM brown bread as a sandwich. Yum Yumr.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
Gently heat some cream with a touch of dill and add the smoked salmon strips, warm through until the salmon is no longer see through. Add to freshly cooked, hot pasta, stir gently and leave for a minute or two so that the pasta soaks up some of the cream. Eat with french stick :drool:Just run, run and keep on running!0
