    Thanks Pink, but I've had scrambled eggs a lot recently - blame it on the spring onion thread...

    I'm off to torture some bread under the grill though - that sounds interesting...

  • I make smoked salmon hash - it's gorgeous! Fry some onion and cooked potato in a pan, then add the smoked salmon when they're nicely browned, add some dill and it's done. It's so lovely!

    Can do the tagliatelle thing with low fat creme fraiche instead of cream, and it is almost as good as the real thing. Otherwise, smoked salmon is nice in a frittata (if you aren't egged out), or I should think would be quite nice in a risotto if you added it at the very last moment, and just warmed through gently until it changed colour from orange to pink.

    I brought some at Mr t's, I guess they are the off cuts as they are cut up very small, has anyone got any inspiration or recipies for them please?

    Hi gingin,

    Smoked salmon pieces are great with pasta in a creamy sauce. Fry some onion in butter, add some single cream or creme fraiche and dill if you have it and heat through. At the last minute add the smoked salmon pieces and pour over cooked pasta.

    It also works well in a quiche or an omlette.

  • You can also fold the smoked salmon pieces into scrambled egg just before the eggs finish cooking. Serve on a toasted bagel with a glass of Aldi champagne for a decadent weekend brunch...

    You could make tiny pancakes (blinis) and put cream cheese on top and then a piece of smoked salmon - very posh.

    A variation .... add about 3/4 of the salmon pieces to the sauce. Whizz it in a blender, pour over pasta and top with the remaining salmon pieces.

    This way, you get a salmony sauce :D (if you like that kind of thing)
    Warning ..... I'm a peri-menopausal axe-wielding maniac ;)
