My meals are pretty meat based this week as we have dd'd bf living with us so I'm now feeding 6. I'm not buying & cooking extra meat though, it's all being stretched with lentils, chopped veg etc.
Edited to say: Breakfasts are cereal, toast or porridge but they must help themselves as I'm not being a short order cook LOL!!
Lunches are soup, sandwiches & things on toast.
Happy Cooking everyone!0 -

Well it's a veggie dish "butterbean and leek bake" that I just serve with smoked pork sausage - but think any sausages would go well.
It's a good food weight watchers one... Serves 2
Heat oven to 190C or 170C fan oven.
Spray low fat oil on a non stick pan. Add leeks and add 3 tbsp of stock, cover pan and cook for 4 mins or until tender. (says 250g leeks but I didn't bother weighing them)
Meanwhile tear up one med slice of bread and whizz into crumbs. Mix with 40g grated half fat cheese.
Add tin of drained butterbeans to the leeks. Then add 2 tsp wholegrain mustard, approx 150ml stock and season. Stir. Tip into baking dish. Cover with cheesy crumbs and bake for 15 mins till crisp.
It's lovely and apparently 3 WW points per serving if anyone wants to know what it saysObviously adding sausages changes that somewhat :rotfl:
OH wants more cheesy crumb topping next timeworking on clearing the clutterDo I want the stuff or the space?0 -

Thats a good idea, I rarely use my oven so that would be much more cost effective.0 -
