Thanks for the thread this morning. Have mine all done and dusted, but don't think I will be shopping until tomorrow morning rather than tonight as a very busy day ahead...

Breakfasts will be porridge, toast or cornflakes - all with a banana smoothie as I seem to be hungrier lately for some reason ;) Snacks will be apples, satsumas, dried fruit, celery ;) or carrot sticks, flapjacks or jam sandwich cake. Puds can be fruit or bakes as above, or yoghurt, vanilla/choc pud or semolina. Drinks are tea/coffee, milk, orange juice or water.

OH's packed lunches are soup mon-wed then PB&J or cheese sarnies, a banana, apple, flapjack and a yoghurt. We will have the HM soup mon-wed too, then cheese sarnies or on toast or scones. Followed by fruit.

Fri: Potato and onion korma with mango rice, chutney and lime pickle

    Sat
    Lunch: At parents' house
Dinner: Tuna and beetroot pasta bake with salad

    Sun
Dinner: Mince (from freezer) with yorkies and mash. Cheesecake.
Tea: Tomato soup and toast followed by cake.

Mon: Jambalaya (from freezer) salad and garlic baguette.
Tue: Chilli bean burgers, sweetcorn and chips.
Wed: Sweet n sour noodles with prawn crackers
Thu: Fish pie (making extra to freeze) peas and garlic baguette
Love and compassion to all x

My meals are pretty meat based this week as we have dd'd bf living with us so I'm now feeding 6. I'm not buying & cooking extra meat though, it's all being stretched with lentils, chopped veg etc.

Edited to say: Breakfasts are cereal, toast or porridge but they must help themselves as I'm not being a short order cook LOL!!
Lunches are soup, sandwiches & things on toast.

    Happy Cooking everyone!

Well it's a veggie dish "butterbean and leek bake" that I just serve with smoked pork sausage - but think any sausages would go well.

It's a good food weight watchers one... Serves 2

Heat oven to 190C or 170C fan oven.

Spray low fat oil on a non stick pan. Add leeks and add 3 tbsp of stock, cover pan and cook for 4 mins or until tender. (says 250g leeks but I didn't bother weighing them :o)

Meanwhile tear up one med slice of bread and whizz into crumbs. Mix with 40g grated half fat cheese.

Add tin of drained butterbeans to the leeks. Then add 2 tsp wholegrain mustard, approx 150ml stock and season. Stir. Tip into baking dish. Cover with cheesy crumbs and bake for 15 mins till crisp.

It's lovely and apparently 3 WW points per serving if anyone wants to know what it says ;) Obviously adding sausages changes that somewhat :rotfl:

OH wants more cheesy crumb topping next time ;)

Thats a good idea, I rarely use my oven so that would be much more cost effective.
