Leek and Potato Soup

Recipe for potato and leek soup:
2oz butter,
2 leeks finely sliced,
1 small onion, finely chopped,
12oz potatoes cubed,
1.5 pints of vegetable stock,
pepper.
Heat the butter, add the leek and onion. Gently fry for 7mins, they should be soft but not brown.
Add the potatoes to the pan, cook for 2-3 minutes.
Add the stock and boil for 30-35mins.
N.B Once I add the potatoes I bring the soup to the boil then I switch the gas off and leave the pan with the lid on. If its left with the lid on it steams it cooked. I then heat it up later for tea. I think if you boiled it for 35minutes it would be over cooked/mushy.
This soup should not be blended as it turns out like wallpaper paste, yuk!

I use this recipe for leek and potato soup:

It has more leeks in than yours and less potato, and it blends fine (well I've never tasted wallpaper paste, but this has a nice texture and isn't too gloopy like some potato-rich soups can be).0 -

We seem to have lots of leeks and potatoes, I'm hoping to make some soup for dh's snap at work, but can't find a recipe for it in the slow cooker (apart from an America one with evaporated milk in it??!).
Has anyone a recipe for this, please? I'd be really grateful, so would dh as he's sick of boring sarnies! I've done a seach but can't find one on MSE.

sorry don't have a recipe just tend to chuck whatever veg i have about in with some stock. Once it is done give it a rough blitz with hand blender to thicken it but keeping lots of lumps and serve with bread0

This is what I do -it's very much done by eye rather than precise quantities. And, yes it can be frozen
Melt some butter in a large saucepan. Add a chopped onion and a couple of chopped rashers of bacon. Fry gently until the onion is soft and the bacon cooked.
Add 3-4 sliced leeks. Stir around to coat with fat.
Add 3-4 medium sized potatoes cut into small chunks.
Pour on enough stock (hm chicken/stock cube) to cover the veg by about a cm. Bring to the boil, then turn down and simmer until all the veg are soft. Blend.

Thriftlady do you blend the bacon as well?We must not, in trying to think about how we can make a big difference, ignore the small daily differences we can make which, over time, add up to big differences that we often cannot foresee.

I don't put bacon in mine, but I do add milk or cream to the stock. Freezes very well. However, it never stays long enough in my house to get frozen!!!I Believe in saving money!!!:T
